A taste that is as close to the authentic as it can be considering the ingredients that are available at the disposal of an average Indian home-cook. Today’s recipe is one of the favorites among the Indian foodies – Alfredo Pasta (अल्फ्रेडो पास्ता), simply known as White Sauce Pasta (वाइट सॉस पास्ता).

White sauce pasta recipe consists of al dente short pasta cooked with a creamy, rich cheese sauce seasoned with Italian herb mix and fresh basil. It is fragrant, melt-in-mouth, smooth, and very flavorful. Since it is not spicy at all, it is a kids-friendly recipe. In fact, a lot of kids love the white sauce pasta.

Besides, white sauce pasta recipe is very quick and easy to prepare. The white sauce is prepared separately. It is then combined with the sauteed veggies and then you stir in the boiled pasta. I have used boiled sweet corn and capsicum. Finely chopped mushrooms taste great in white sauce paste recipe. If you have them, go ahead and add a quarter of a cup of it.

Ingredients
For Preparing the Pasta
  • Pasta - 1 cup (110 grams) - Chifferi Rigati or any short pasta
  • Water - 4 cups
  • Salt - ½ tsp
For Making the White Sauce
  • All-purpose flour/Maida - 1 & ½ tbsp
  • Butter - 1 & ½ tbsp
  • Milk - 1 & ½ cup
  • Cheese slices - 4
  • Salt - to taste
  • Black pepper - ½, coarsely ground
For Making the Sauteed Vegetables
  • Olive oil - 2 tbsp
  • Onion - ¼ cup, finely chopped
  • Capsicum - ¼ cup, finely chopped
  • Boiled sweet corn kernels - ¼ cup
  • Garlic - 1 tbsp, minced
  • Lemon juice - 1 tsp or to taste
  • Red chili flakes - 1 tbsp
  • Italian/Pasta seasoning - 1 tbsp
  • Salt - to taste
  • Fresh basil - 10 leaves
Instructions
Making the White Sauce
  1. First of all, let's prepare the white sauce. Melt butter in a pot and add all-purpose flour/maida to it.
  2. Saute while stirring it constantly over low heat until the raw smell of the flour is gone. This mixture of butter and flour is called roux.
  3. When the roux turns slightly golden, turn off the heat. Slowly add in the milk and whisk as you go to avoid the formation of lumps.
  4. Turn the heat back on and bring the sauce to a boil. Simmer for 4-5 minutes while stirring it.
  5. When the sauce thickens, add the cheese and whisk well to form a smooth sauce.
  6. Turn the heat off when the cheese melts. Season with salt and black pepper.
  7. White sauce for pasta is ready. Set it aside.
Preparing the Pasta
  1. To prepare the pasta, bring the water to a boil in a big pot. Season it with salt.
  2. Toss in the pasta and cover the pot. Let the pasta cook for 8-10 minutes or until it's al dente.
  3. While the pasta is boiling, heat the olive oil in a skillet and toss in the onions.
  4. When the onions are pink, add the minced garlic. Saute for a minute.
  5. Next, add the capsicum and sweet corn and saute for a few seconds. Do not overcook the veggies.
  6. Add some salt, Italian seasoning, and red chili flakes and saute on low heat for a few seconds.
  7. The pasta is al dente by now. Drain it using the strainer. Reserve the stock just in case if you need to thin the sauce.
  8. Add the pasta and the white sauce to the sauteed veggies and mix well. If the mixture looks too thick at this stage, add a couple of tablespoons of the reserved water in which you boiled the pasta.
  9. Tear the basil leaves and add it to the pasta. Add lemon juice as well. Continue to cook on low heat for a minute. The sauce should coat the pasta inside out.

Now let’s prepare the pasta. I have used Del Monte’s Chefferi Rigati. You can use any short pasta that you like.

    maine ek baar basil khai hai, tulsi jaise hi lagti hai, kya hum tulsi ka use kar sakte hai isme, humare yaha basil nahi milta lekin mujhe ye recipe banani hai.

      Hi Mrinal. Tulsi alag cheez hai aur is recipe main nahi use kar sakte hain. Aap market se dried basil kharid kar layein. Snappin’ brand bahot acha hai.
