Today I am sharing with you a very healthy, filling, and absolutely delicious Veg Sandwich Recipe (वेज सॅन्डविच रेसिपी).

It features a mélange of nutritious veggie patties, fresh salad vegetables and tantalizing tamarind chutney. You are transported into a different world altogether when you sink your teeth into one of these handsome looking sandwiches. Make it Ahead of Time

Once you try this Veg Sandwich Recipe, it’s going straight into the treasure box of your sandwich ideas. What makes them even more amazing is the fact that you can prepare the elements ahead of time. Store the veg patties in the freezer, and the tamarind chutney and cheese sauce in the fridge. This sandwich comes in handy when you want to make quick recipes for dinner. Whenever you are hungry, just fry the patties in hot oil straight from the freezer and microwave the cheese sauce for a few seconds and give it a light whisk. The tamarind sauce however should be chilled. Assembling the sandwich barely takes a minute. The combination of hot patties and chilled chutney along with crisp lettuce and juicy tomatoes creates an explosion of flavors in your mouth, one after another.

What’s in the Veg Patty?

The recipe of veggie patty is exceptionally easy. It has loads of boiled vegetables and very few Indian spices that do not overpower the taste. I have used potatoes, and roasted gram flour or besan for as the binding agents. You have to dry roast the gram flour on medium heat till it gives out a nutty aroma and looks a little bit darker. It tastes much better than the cornstarch. It is an ideal sandwich recipe for kids.

This veg sandwich recipe is a delight for the vegetarians out there. An Indian veg patty with unparalleled flavors coupled with the tempting tamarind chutney packed along with fresh lettuce and tomatoes between two slices of lightly toasted bread; it’s a piece of heaven on the plate.

Ingredients
For the Veggie Patty
  • French beans – 1 & ½ cup
  • Cauliflower florets - 1 & ½ cup
  • English carrots - 1 & ½ cup
  • Frozen green peas - 1 & ½ cup
  • Boiled potatoes – 3 medium, mashed
  • Green chilies – 8, medium hot variety
  • Garlic – 4 small cloves
  • Ginger - 1 & ½ inch piece
  • Roasted gram flour / besan – 5 tbsp
  • Salt – to taste
  • Cumin seeds powder – 1 tsp
  • Green cardamom powder – ¾ tsp
  • Black pepper – ½ tsp
  • Sunflower or canola oil – for deep frying
Other Ingredients for Making Sandwiches (for 1 sandwich)
  • Bread – 2 slices
  • Butter – to spread
  • Cheese sauce – 1 tbsp (recipe here)
  • Tamarind sauce – 2 tsp
  • Iceberg Lettuce – a handful
  • Tomato – 3 slices, sprinkled with salt
Instructions
  1. First off, let’s make the veggie patty mix. Start by boiling the veggies. Boil sufficient water in a pot and in the French beans. After 2-3 minutes, add the cauliflower florets.
  2. After another 2 minutes, add the carrots and frozen green peas. If using fresh peas, add them along with the beans in the beginning. Continue to boil the veggies for another 2 minutes till they are partly cooked.
  3. In the meanwhile, pulse together ginger, garlic and green chilies till they get minced.
  4. When the veggies are partly cooked, strain them well.
  5. Grind the veggies to a coarse paste and squeeze out the excess water using a muslin cloth. Take it out in a bowl.Add the boiled potatoes, roasted gram flour/besan, minced ginger-garlic-green chilies, salt, cumin powder, cardamom powder, and black pepper.
  6. Mix well with a light hand. Veggie patty mix is ready.
  7. Divide the mix into 13-14 parts. Shape them like patties, round, oval or as you may like. You can fry them immediately. I prefer to freeze the patties for 3-4 hours.
  8. To fry the patties, heat oil in a skillet at 180 degrees. Carefully drop the patties in hot oil. Do not overcrowd the skillet. When the underside develops a crust, flip the patties. Turn the heat to medium-low and continue to fry till it becomes brown and crispy.
  9. Remove the patties onto a paper towel. Cut into one patty to make sure it’s cooked through. Fry the rest of the veggie patties the same way.
  10. To make the sandwiches, have all the ingredients at hand; hot veggie patties, bread, lettuce, tomatoes, tamarind chutney, cheese sauce, and butter.
  11. Lightly toast two bread slices. Apply a thin layer of butter on one side of both slices.
  12. Place a lettuce leaf and drizzle a couple of teaspoons of tamarind chutney.
  13. Place two veggie patties and then tomato slices that have a sprinkle of salt on them.
  14. Evenly drizzle some cheese sauce over the sandwich. Place another lettuce leaf. Pack the sandwich with the toasted and buttered bread slice. Make the remaining sandwiches just like this one.
  15. Serve the veg sandwich recipe is ready. Serve immediately. Enjoy!

When the veggies are partly cooked, strain them well.

Add 3 medium-sized boiled, mashed potatoes, 5 tbsp roasted gram flour/besan, minced ginger-garlic-green chilies, salt to taste, 1 tsp cumin powder, ¾ tsp cardamom powder, and ½ tsp black pepper.
