This veg pulao recipe is different from the ones you might have had. That’s because it has no mainstream Indian masalas such as turmeric, coriander powder, or red chili. The fragrance comes from the whole spices. I have just used Everest Chicken Masala for a mild spiciness. Please note that Everest Chicken Masala is vegetarian; it is just a mixture of spices meant to be used for making chicken curry. If at all you still have apprehensions, you may skip it. Or you can use pulao masala. The taste would be different, but still good.

Ingredients
Whole spices
  • Black peppercorns - 12
  • Cloves - 3
  • Green cardamom - 5
  • Black cardamom - 2
  • Cinnamon - 2 inch stick
  • Caraway seeds/Shahi jeera - ½ tsp
  • Star anise - 2-3 petals
  • Mace/Javetri - 1
  • Bay leaves - 3
Vegetables (add more or less as per your choice)
  • Cabbage - 1 cup, shredded
  • Carrots - 2 medium, diced
  • Capsicum - 2 medium diced
  • French beans - ½ cup, chopped
  • Cauliflower florets - 1 cups
  • Tomatoes - 2 medium, sliced lengthwise or chopped
Other ingredients
  • Ghee - 3 tbsp
  • Onions - 1 cup, finely chopped
  • Ginger - 1-inch, finely crushed
  • Garlic - 12 cloves, finely crushed
  • Green chilies - 2, slit lengthwise
  • Coriander leaves - a handful, finely chopped
  • Rice - 1 & ½ cups, soaked for 30 minutes
  • Water - 2 & ½ cups (or as needed)
  • Salt - to taste
  • Everest chicken masala - ½ tbsp (or pulao masala)
  • Garam masala - ¼ tsp
  • Vegetable stock cube - 1 (optional)
  • Veg Magic cube - 1 (optional)
Instructions
  1. To make veg pulao recipe, heat ghee in a pressure cooker. Add in the whole spices and saute for a few seconds until they puff up.
  2. Toss in the chopped onion and saute it until it starts to turn golden.
  3. Add the crushed ginger and garlic. Saute until the raw smell disappears.
  4. Toss in the cabbage and saute for a minute.
  5. Next, add the rest of the vegetables. Give it a mix.
  6. Add tomatoes, green chilies, Maggi vegetable stock cube, and Veg Magic cube. Give it a mix.
  7. Finally, season the veggies with garam masala and Everest chicken masala or pulao masala. Saute for a minute.
  8. Drain the soaked rice and add it to the vegetables.
  9. Saute the rice with the vegetables for a minute, mixing it very gently.
  10. Add 2 & ½ cups hot water and add salt. Since we have used the stock cube and Magic cubes, which already contains some salt, you will need to add a bit less salt. Stir.
  11. Pressure cook the rice for 1 whistle on medium-high flame. Turn the heat off.
  12. Let the pressure release on it's own. Let the rice rest for another 5 minutes. Then open the cooker.
  13. Fluff the rice gently with the back of the mixing spoon. Serve it in the serving bowl and garnish with fresh coriander.
  14. Veg pulao is ready. Serve it hot with curd/dahi, or kadhi. Don't forget to have some onions and lemon on the side.

  1. To prepare veg pulao in a pot or a handi, you willneed to add 3 & ½ cups of hot water.
  2. Cook the pulao on medium heat until most of the water has evaporated and holes begin to develop on the surface of the pulao.
  3. Then turn the heat to low. Cover the pot/handi with a tight-fitting lid. Cook for another 7-8 minutes.
  4. Turn the heat off and let the pulao rest on dum for 5 minutes.
  5. Uncover the pot and fluff up the rice and garnish with fresh coriander. Serve hot.

Next, add the rest of the vegetables; 2 medium carrots diced, 2 medium capsicum, diced, 1/2 cup chopped french beans, and 1 cup cauliflower florets. Give it a mix.

Finally, season the veggies with 1/4 tsp garam masala and 1/2 tbsp Everest chicken masala or pulao masala. Saute for a minute.
