After sandwiches, soups are the second best food I am thankful for. They are super versatile and extremely healthy. If you don’t like eating vegetables that are good for you, make soup out of them. You get all the nourishment and your taste-buds get a treat. I have been on a soup diet in the past for a couple of weeks. The intention of losing weight combined with my desire to have something sumptuous and the creative juices started flowing. Let’s accept it; we can stick to the diet only as long as the food retains its fascination. It’s my attempt to make soups exciting and wholesome at the same time. You would see a hint of it in this tomato soup recipe (टमाटर का सूप रेसिपी) that’s so novel in choice of ingredients that you are going to want to try it.

I have used fresh, locally-produced tomatoes. They are ripe, red and brimming with natural goodness. A little bit of butter does no harm. You can always replace it with olive oil, although I wouldn’t recommend it unless it’s absolutely necessary for you. In my opinion, a comforting soup ought to be thick and many commercially produced ones have corn \starch in them. That’s not a very good thickening ingredient to add to the soup recipes. I have used yellow moong dal or split and skinned green gram. It’s viscous and just a tablespoon of it is enough to thicken four servings of tomato soup.
Besides, I have used just a teaspoon of cream for garnishing. If you want it to be richer, add as much cream as you like. But do add some; do not skip it all together. Tomato soup without cream is blasphemy. Tomato soup using tomato sauce has always been a popular concept. When I say tomato sauce, I mean the ketchup. Adding a couple of tablespoons of 100% natural ketchup to a potful of soup does wonders to its taste.
Homemade tomato soups are always low in sodium. If you look closely, the tomato soup nutrition label on the soup can mentions the amount of sodium in it. And trust me, it is way too high. You don’t want to put that much sodium in your body in just one go.

This is my Mom’s recipe from the 1980s and she comes from a small town in India. She didn’t have any fancy gadgets such as the soup maker or the soup blender at that time. Just a humble, regular blender was all she had. I have followed the suit. You too can make a perfect tomato soup without these gadgets.
All you need is a pressure cooker, a pot and a soup ladle. If you don’t have a pressure cooker, let the tomatoes simmer in a pot covered with a lid till they are cooked through.

A simple tomato soup tastes splendid on its own. Or you could some baked croutons to impart an interesting texture. Soup and salad is a popular combination among the health conscious folks. Tomato soup pairs well with baby spinach salad or lettuce-broccoli salad with a light dressing.
The soup and sandwich combination is a regular on the menus of popular restaurants across several western countries. The trend is catching up in India too. I can swear by tomato soup and grilled cheese. Very few winter foods come close to it.
