I grew up relishing this rice dish often for brunch on Sundays with my entire family and I intend to carry the tradition forward. Apart from tomato, the other prominent flavor comes from cilantro or coriander leaves.It adds a lot of herby freshness to the piquant rice. There are several ways to make a tomato rice recipe. One way being re-purposing cooked leftover white rice. You could add them to the tomato masala. And the second one being this; where you add raw rice and cook the rice along with the tomato sauce. I would recommend the latter one because that way the rice absorbs the flavors better. Tomato rice recipe is a super-easy dish consisting of delicious garlicky rice cooked with Indian masalas and plenty of tomatoes.

Ingredients
  • Rice – 1 & ½ cup
  • Water – 3 & ½ cups
  • Onion – 1 medium, finely chopped
  • Tomato – 8 medium, finely chopped
  • Tomato – 1 medium, whole (optional)
  • Garlic – 15 cloves
  • Green chilies – 8 or to taste, mildly hot variety
  • Coriander leaves – ¾ cup + some more for garnish
  • Curry leaves – 4
  • Oil – ⅓ cup
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Fenugreek seeds – 20
  • Asafoetida – ¼ tsp
  • Kashmiri red chili powder – 1 and ½ tsp
  • Turmeric powder – ½ tsp
  • Coriander powder –1 tsp
  • Salt – to taste
Instructions
  1. Wash rice and soak it for 30 minutes. Drain it.
  2. Pound together the garlic, green chilies and coriander seeds to a coarse mixture in a mortar & pestle.
  3. Heat oil in a dekchi or stock pot. Add mustard seeds. Once they splutter, add cumin seeds and let them sizzle. Add asafetida.
  4. Add the fenugreek seeds and fry for a few seconds. Take care not to burn them.
  5. Add the onion and sauté till it begins to turn golden.
  6. Add the garlic-green chilli-coriander leaves mixture and sauté on medium heat till the raw sell of garlic goes away.
  7. Add the chopped tomatoes and salt.Cook till they get mushy.
  8. Add the spices when the oil separates – Kashmiri red chili powder, turmeric powder, and coriander powder. Cook till the raw smell of turmeric goes away.
  9. Add the rice and sauté with the masalas for 2-3 minutes. Sprinkle some water if it looks too dry.
  10. Add water and adjust the salt. Let the water come to a boil.
  11. When only ⅓ of the water is left, keep a whole tomato in the center and push it into the rice. Also, place the curry leaves on top.
  12. Cover and cook on low flame for 10 minutes. Turn off the flame and let the rice stand for another 10 minutes.
  13. Fluff the rice up and mash the tomato slightly. Garnish with some coriander leaves.
  14. Tomato rice recipe is ready. Serve hot with papad or raita. Enjoy!

For the preparation of tomato rice, chop the onions. Lay out the curry leaves, garlic, coriander leaves, and green chilies.

Chop the tomatoes finely.

Heat 1/3 cup oil in a sipri or stock pot. Add 1 tsp mustard seeds. Once they splutter, add 1 tsp cumin seeds and let them sizzle. Add 1/4 tsp asafetida.

Add 8 chopped tomatoes and some salt. Cook till they get mushy.

Add the spices when the oil separates – 1 & 1/2 tsp Kashmiri red chili powder, 1/2 tsp turmeric powder, and 1 tsp coriander powder. Cook till the raw smell of turmeric goes away.

Add the rice and sauté with the masalas for 2-3 minutes. Sprinkle some water if it looks too dry.

The rice should get a nice color.

Add 3 & 1/2 cups water and adjust the salt. Let the water come to a boil.

When only 1/3 of the water is left, keep a whole tomato in the center and push it into the rice. Also, place 4 curry leaves on top.

Cover and cook on low flame for 10 minutes. Turn off the flame and let the rice stand for another 10 minutes.
