Tahini is a sesame seeds-based condiment that is used to impart flavor to several other Middle-Eastern recipes. It needs only two ingredients – sesame seeds and oil. Instructions
  1. Have the tahini ingredients ready at hand. Heat a heavy base pan and toss in the sesame seeds. Toast them on medium-high heat, tossing constantly.
  2. The seeds would make a popping sound and turn golden. That’s how you know you are ready. When the sesame seeds cool off, transfer them to a grinder.
  3. Grind them for a few seconds. They will turn into a fine and lumpy paste because of the oil the seeds release.
  4. Add the olive oil, 2 tbsp or as needed, to get the right consistency depending on the oil content of your sesame seeds.
  5. Grind for a few seconds to get a smooth, creamy paste.
  6. Tahini paste is ready. Use as needed. Transfer in a clean bottle and refrigerate.
