Moong Sprouts Khichdi Recipe – Easy Pressure Cooker Khichdi Recipe

Khichdi (खिचड़ी) is one of the most adored comfort foods; thanks to its innate qualities of being nourishing and delicious. If you want to have something that is light, healthy, and easy to make all at once, this khichdi recipe (खिचड़ी रेसिपी) is for you. This is very different from the mainstream khichdi recipes that use dal/lentil along with the rice. We are using sprout mung beans, which is an excellent source of proteins and vitamins. It’s not very hot and spicy, unlike the masala khichdi recipe (मसाला खिचड़ी रेसिपी) that I had shared previously. You can check out the recipe here. Your kids will love the sprouts khichdi a lot. Pressure Cooker Khichdi Recipe

Pressure cooking is just amazing because it saves you so much time and energy. I have grown up enjoying this sprouts khichdi recipe. My Mom learned making it from a friend of hers a long time ago and here I am passing it on to you. I recommend you use aged rice for this khichdi recipe, preferably basmati for achieving the best results. Otherwise, you can go for aged kolam variety of rice. Using aged rice means that your khichdi will not turn out sticky and mushy. The grains of rice would be perfectly cooked yet won’t cling to one another.

Ingredients
  • Sprouted mung beans/Whole green moong - 1 & ½ cups
  • Basmati Rice - 1 cup, soaked for 30 minutes
  • Scraped fresh coconut - ¾ cup
  • Water - 2 & ½ cup
  • Ghee/Clarified butter - 2 tbsp
  • Cumin seeds - ½ tsp
  • Hing/Asafoetida - ¼ tsp
  • Salt - to taste
  • Coriander powder - ½ tbsp
  • Roasted cumin powder - 1 tsp
  • Turmeric - ¼ tsp
  • Byadgi red chili powder - ½ tbsp
  • Sugar - ½ tbsp
  • Coriander leaves - ¼ cup, finely chopped, divided
Instructions
  1. To make sprouts khichdi, start off by heating the ghee/clarified in a pressure cooker.
  2. Add the cumin seeds and let them sizzle. Then add the hing/asafoetida and let it sizzle as well for 2-3 seconds.
  3. Next, add in the mung bean/moong sprouts, half of the coriander leaves, scraped fresh coconut, salt, sugar, roasted cumin powder, coriander powder, byadgi red chili powder, and turmeric powder.
  4. Mix well and saute for a minute on low heat.
  5. Add in the basmati rice. Saute for a minute.
  6. Add 2 & ½ cups of water and mix. Adjust the amount of water depending on the type of rice, and your pressure cooker's requirement. Turn the heat to high.
  7. Close the pressure cooker and cook for 2 whistles. Then let it cook on low heat for the next 5 minutes.
  8. Once done, wait for 15-20 minutes before opening the cooker. This will ensure the khichdi would not turn out mushy.
  9. Fluff up the khichdi with the back of the spoon. Add the remaining coriander leaves.
  10. Sprouts khichdi recipe is ready. Serve it hot with some lemon pickle and salad on the side. Enjoy!

Step 2

To make sprouts khichdi, start off by heating 2 tbsp ghee/clarified in a pressure cooker. Add 1/2 tsp cumin seeds and let them sizzle. Then add 1/4 tsp hing/asafoetida and let it sizzle as well for 2-3 seconds.

Next, add in 1 & 1/2 cups mung bean/moong sprouts, 2 tbsp finely chopped coriander leaves, 3/4 cup scraped fresh coconut, salt to taste, 1/2 tbsp sugar, 1 tsp roasted cumin powder, 1/2 tbsp coriander powder, 1/2 tbsp byadgi red chili powder, and 1/4 tsp turmeric powder.

Step 4

Mix well and saute for a minute on low heat.

Add in 1 cup basmati rice that had been soaked for 30 minutes and then drained.

Saute for a minute.

Add 2 & 1/2 cups of water and mix. Adjust the amount of water depending on the type of rice, and your pressure cooker’s requirement. Turn the heat to high. Close the pressure cooker and cook for 2 whistles. Then let it cook on low heat for the next 5 minutes.
