My version of spinach corn sandwich recipe is a meld of many flavors. It brings together the goodness of Indian sandwich fillings and the flavors of a Chinese condiment – the schezwan sauce. I know that’s quite an unusual combination. But you have to try it to believe that you would experience a burst of flavors in your mouth upon the very first bite.

This is a very quick sandwich recipe if you have green chutney and schezwan sauce ready. All you have to do is make corn and spinach patties and assemble the sandwich. You could also prepare the patties ahead of time and store it in the refrigerator. Shallow fry them without thawing whenever you are ready to assemble the sandwiches.

Spinach Corn Sandwich Recipe - A fusion sandwich recipe with corn spinach patty, and punch of schezwan sauce and green chutney.

Ingredients
For the Patty:
  • Spinach – 3 cups, tightly packed
  • Sweet corn - ½ cup
  • Crumbled paneer – ½ cup, preferably homemade
  • Boiled potato - ¼ cup, mashed
  • Green chilies – 2, finely chopped
  • Ginger – ½ tsp, finely crushed
  • Cornstarch – 2 tbsp
  • Nutmeg – ¼ tsp
  • Kashmiri red chili powder – 1 tsp
  • Black pepper powder – ¼ tsp
  • Chat masala – 1 tsp
  • Cumin powder – ⅓ tsp
  • Salt – to taste
  • Coriander leaves – 2 tbsp, finely chopped
  • Lemon juice – 1 tsp
  • Oil – to shallow fry the patties
  • Water – to boil the spinach and sweet corn
Other Ingredients:
  • Schezwan sauce – as needed (recipe here)
  • Green chutney – as needed (recipe here)
  • Cheese slices – 4
  • Bread slices 8
  • Butter – as needed
Instructions
  1. Let’s start by making the patties. Take spinach in a pot with enough water. Bring it to a boil and let it cook for 3-4 minutes till it softens.
  2. Strain the spinach and hold it under running cold water. Squeeze out the water. The spinach will have reduced to just ¾ cup. Chop it.
  3. Boil the sweet corn in enough water for 10 minutes or till it gets cooked well.
  4. Strain the sweet corn and allow it to cool. Crush it roughly in a mortar and pestle, just to break the grains. You could use the food processor if you do not have mortar-pestle.
  5. Place all these ingredients in a bowl – paneer, potato, spinach, sweet corn, cornstarch, salt, spice powders, lemon juice, green chilies and coriander leaves.
  6. Divide it into 9-10 parts and make flat, round patties out of it.Put them in the freezer for 10 minutes.
  7. Shallow fry them on a non-stick pan with sufficientoil till they become golden brown on both sides.
  8. Remove them onto a plate.
Assembling the Sandwich
  1. Apply butter onto two bread slices.
  2. Apply a spoonful of green chutney on one slice.
  3. Place two patties over the layer of green chutney.
  4. Break it gently and spread it on the bread slice.
  5. Place a slice of cheese.
  6. Apply a spoonful of schezwan sauce.
  7. Place the other buttered slice and close the sandwich.
  8. Place the sandwich on a hot tawa/pan/griddle and toast it by applying butter on both sides.
  9. Toast till it becomes golden brown and the cheese melts.
  10. Cut the spinach corn sandwich into two and serve hot with tea or coffee. Enjoy!

    i tried it and was awesome!
    i am planning to make these sandwiches as main dish for an upcoming party, i dont have any one to help, can i make 40 sandwiches in 3~4 hours? please help

      Hi Anita. First of all, thank you for all the appreciation. 🙂
      Secondly, yes, you can definitely make 40 sandwiches and that too in less than 3 hours. I had a small get-together and I had made 15 of these in less than an hour. I will tell you how.
      Make the patties in advance, 1 or two days ahead and freeze them. Make the schezwan sauce ahead of time as well. On the day of the party, make the green chutney fresh. Fry the patties and set them aside. Free your kitchen platform or a work table/dining table to make it like a sandwich assembly line. Spread out the breads, apply butter, chutneys, put the patties in, pack the sandwiches. Make 3-4 sandwiches at a time, otherwise they will go soggy. Use 2 tawas instead of one if there is a rush, and toast the sandwiches. While the sandwiches are toasting, make another batch of sandwiches.
