Sattu (सत्तू) or sattu ka atta (सत्तू का आटा) is a very healthy alternative to snacking on packaged foods. Homemade, fresh, and nutritious, sattu is a great snack for kids when they come home from school. I will share some recipes soon that you can make with sattu flour. Sattu is really good for not just kids, but also grown-ups, especially the elderly.

what is sattu?

When I first heard about sattu, it was a long time ago. My neighbor had brought me some homemade sattu parathas that were stuffed with sattu; dough stuffed with flour. I was so confused.

What is sattu? That was my first question to her. And she explained it to me. I was blown out of my mind when I had taste those Bihari style sattu parathas. So let me explain to you what sattu really is.

Sattu is very popular among certain parts of India, especially the northern region. For the uninitiated, sattu is a flour made from roasted grains. There ingredients and their rations for preparing sattu varies from one region to another. In Bihar, the sattu is made with roasted chana dal / roasted bengal gram and sometimes, they also add roasted barley to it.

In Punjabi, sattu is prepared mainly with roasted barley. Corn or millet are added depending on one’s liking. In Maharashtra, sattu ka aata is made with roasted wheat and roasted bengal gram. It is called saatu che peeth (सातू चे पीठ).

Sattu is very nourishing. It is rich in fiber, protein, and minerals like calcium, iron, manganese, magnesium, etc. It is very filling too. Sattu is good for digestion because of its high-fiber content. It doubles as a summer cooler too. It rejuvenates and re-hydrates the body. Sattu ka atta is mixed with cold water and some jaggery or sugar for sweetness, and enjoyed during summers.

You can also make savoury sattu drink by adding salt instead of sugar/jaggery.

Sattu or sattu ka aata is heathy recipe made from roasted wheat and roasted chana dal or bengal gram. It is a flour that can be used to make porridge and beverages, and laddus.

Ingredients
  • Wheat - 350 grams
  • Roasted chana dal / bengal gram - 150 grams
  • Grated nutmeg - a little less than ½ tsp
  • Green cardamom powder - ¼ tsp
Instructions
  1. Heat a kadhai or a pan and add wheat to it. Roast the wheat stirring continuously on medium-low heat.
  2. Roast for 4-5 minutes or until it puffs up, loses its moisture and becomes crunchy. Remove it onto a plate.
  3. Add in the roasted bengal gram. Roast it over medium-low heat for 2-3 minutes.
  4. We just want to get rid of the moisture. Do not let the color of the roasted chana dal change.
  5. Remove the roasted chana dal onto a plate and let it cool.
  6. Combine the wheat and the chana dal into a grinder jar.
  7. Add the grated nutmeg and powdered green cardamom to it.
  8. Grind to a very fine powder to that you get a smooth texture when yo make porridge with the sattu flour. Grind in batches if needed.
  9. Sattu recipe is ready. Store in an airtight container or a stainless steel dabba. Use as needed.

Step 1

Heat a kadhai or a pan and add 350 grams wheat to it. Roast the wheat stirring continuously on medium-low heat.

Step 2

Roast for 4-5 minutes or until it puffs up, loses its moisture and becomes crunchy. Remove it onto a plate.

Step 3

Add in 150 grams roasted bengal gram. Roast it over medium-low heat for 2-3 minutes. We just want to get rid of the moisture. Do not let the color of the roasted chana dal change.

Step 4

Remove the roasted chana dal onto a plate and let it cool.

Step 5

Combine the wheat and the chana dal into a grinder jar.

Add in the grated nutmeg, a little less than 1/2 tsp.

Add in 1/4 tsp powdered green cardamom to it.
