After pizza, pastas are one of the Italian dishes that have been rapidly making their way into the mainstream foods in India. Also, parents nowadays are incorporating pasta in the diets of their toddlers and kids because of its nutritional value. Pasta is made from wheat, making it a healthy choice for kids. Red sauce pasta recipe is one of the favorites among the kids and even though the name Arrabiata means hot, it’s not really that hot in comparison to Indian food.

Red sauce pasta is very tangy with a hint of sweet. It has an alluring aroma from the mixed dried herbs and fresh basil. A little of cheese lends a light richness of the sauce. Traditionally, pasta arrabiata is prepared with canned crushed tomatoes. However, it is very hard to find them in India unless you live in one of the big cities where you can easily find them at the supermarkets.

Tomatoes and Puree for Making the Red Sauce for Pasta

I have tried to bring the taste of red sauce as close as to that prepared with canned crushed tomatoes. Canned tomatoes have glutamic acid in them, which lends the sauce the desired tartness and umaminess. A small amount of ready-made puree can replicate that taste. In addition, the chunky puree made from blanched fresh tomatoes mimics the texture of crushed tomatoes. And finally, adding some ketchup towards the end of the cooking process emulsifies the red sauce. Do not make red sauce from just ready-made tomato puree. It would be extremely sour and you will need to add a lot of sugar to it.

I highly recommend that you use penne rigate for making red sauce pasta. I have tried it with other kinds of short pasta but penne yields the best pasta-to-ratio ratio. I have used Del Monte’s pasta. You can use any brand as long as the quality is good.

Choosing the Cheese for Red Sauce Pasta Recipe

Parmesan is the traditional choice of cheese added to the arrabiata pasta. The Italians also like to add pancetta to it. These ingredients are not readily available. But if you have parmesan cheese and you like pancetta, do add them to this recipe. I have simply used some cheese cubes to the red sauce pasta recipe.

It’s a dish made with penne rigate tossed in a fresh tomato-based sauce that holds the subtle flavors of Italian herbs and paprika, and freshness of basil; a pasta recipe loved by both kids and grown-ups.

Ingredients
For Preparing the Pasta
  • Penne Rigate - 1 & ¾ cups (200 grams)
  • Water – 6 cups
  • Salt – ½ tsp
For Making the Red Sauce
  • Tomatoes – 500 grams
  • Water – for blanching the tomatoes
  • Ready-made tomato puree – ¼ cup
  • Onions - ¼ cup, finely chopped
  • Garlic – 2 tbsp, minced
  • Bay leaf – 1
  • Black pepper – ½ tsp, coarsely ground
  • Salt – to taste
  • Sugar – 2 tsp
  • Pasta Mix / Italian seasoning – ½ tbsp
  • Red chili flakes – 1 tbsp
  • Paprika – ½ tbsp
  • Ketchup – 2 tbsp
  • Cheese – 2 tbsp, grated
  • Fresh basil – 10 leaves
  • Extra-virgin olive oil – 3 tbsp
Instructions
  1. First off, bring a potful of water to a boil. Add tomatoes to it and boil them until their peel cracks.
  2. Remove the tomatoes onto a plate. When they cool off, peel them and chop them roughly. Transfer them to a blender.
  3. Pulse the tomatoes to get a chunky puree.
  4. Let’s prepare the pasta. Bring the water to a boil in a big pot. Add salt to it.
  5. Toss in the penne pasta and cover the pot.
  6. Let the pasta boil for 8-10 minutes or until al dente. Stir occasionally.
  7. In the meanwhile, prepare the red sauce. Heat extra-virgin olive oil in a skillet and add the bayleaf along with the onions to it. Sauté until the onions begin to turn pink.
  8. Next, add the minced garlic. Sauté the garlic for a minute while stirring it often. Do not let it change color.
  9. Add the pasta mix/Italian seasoning and red chili flakes. Sauté for a few seconds.
  10. Add in the ready-made tomato puree and fresh pureed tomatoes. Mix.
  11. Season the sauce with salt, coarsely ground black pepper, paprika, and sugar. Adjust the amount of sugar depending on the tartness of the fresh tomatoes and the puree. Simmer the sauce so that no more water separates from it and it achieves a uniform consistency.
  12. Add the ketchup and fresh basil. Tear the basil leaves with hands.
  13. Finally, add cheese. Mix well.
  14. The pasta would be cooked by now. Strain it.
  15. Add the pasta to the red sauce.
  16. Give it a good toss. Red sauce pasta recipe is ready.

Toss in 1 & ¾ cups (200 grams) penne pasta and cover the pot. Let the pasta boil for 8-10 minutes or until al dente. Stir occasionally.

In the meanwhile, prepare the red sauce. Heat 3 tbsp extra-virgin olive oil in a skillet. Add 1 bay leaf and ¼ cup finely chopped onions to it. Sauté until the onions begin to turn pink.

Next, add 2 tbsp minced garlic. Sauté the garlic for a minute while stirring it often. Do not let it change color.

Add ½ tbsp pasta mix/Italian seasoning and 1 tbsp red chili flakes. Sauté for a few seconds.

Add in ¼ cup of ready-made tomato puree and fresh pureed tomatoes that we just made. Mix.

Season the sauce with salt, 1/2 tsp coarsely ground black pepper, 1/2 tbsp paprika and 2 tsp sugar. Adjust the amount of sugar depending on the tartness of the fresh tomatoes and the puree. Simmer the sauce so that no more water separates from it and it achieves a uniform consistency.

Step 13

Add 2 tbsp ketchup and 10 fresh basil leaves. Tear the basil leaves with hands.
