The health factor has to top the list without a doubt. Semolina is a very healthy ingredient and this rava upma recipe is made with desi ghee (देसी घी)or clarified butter. It’s a very easy and quick recipe for breakfast that both children and adult enjoy with great gusto.

The addition of cashews and raisins enhances its texture and taste multifariously. The occasional bites into crunchy cashews and soft tangy raisins are very desirable. The tempering ingredients are very simple – just the plain old mustard, cumin, curry leaves, and urad dal (उड़द दाल). For the purpose of seasoning, all you need is salt, sugar, and lemon. The aroma of the final dish is earthy and inviting. Rava upma is very filling and continues to taste great as hours pass by. It’s an ideal recipe for your kid’s lunch box too.

Rava upma or sooji upma is a traditional Indian breakfast recipe. A savory semolina dish with earthy flavors of curry leaves and the wholesomeness of ghee is the perfect breakfast for the entire family.

Ingredients
  • Fine semolina / Sooji / Rava – 1 & ½ cup
  • Onion – 1 large, finely chopped
  • Tomato - 1 medium, finely chopped
  • Garlic – 6 cloves, 1 large, finely crushed

  • Green chilies – 3, finely chopped
  • Curry leaves – 10
  • Cilantro/Coriander leaves – a handful
  • Lemon juice – 1tbsp or to taste
  • Salt – to taste
  • Sugar – ½ tbsp
  • Raisins – 2 tbsp
  • Cashew nuts –15 to 20
  • Mustard seeds – ¾ tsp
  • Cumin seeds – ¾ tsp
  • Urad dal – 1 tbsp
  • Ghee/Clarified butter – 3 tbsp
  • Water – 4 cups
Instructions
  1. Heat a pot or a pan and add semolina and 1 tbsp ghee/clarified butter to it. Roast the semolina while stirring it constantly till it changes color and becomes fragrant.
  2. Remove the roasted semolina in a bowl.
  3. Add some more ghee/clarified butter and fry the cashews until golden. Remove them onto a plate.
  4. Toss in the raisins and fry them till they puff up. Remove them onto a plate too.
  5. Melt the remaining ghee/clarified butter. Once hot, add the mustard seeds and let them pop. Then the cumin seeds and let them sizzle. Add urad dal and fry till it turns light brown.
  6. Toss in the onions and sauté them until pink.
  7. Add the green chilies and curry leaves. Sauté them till the curry leaves give out a nice aroma.
  8. Next, add the ginger and garlic. Sauté for a minute.
  9. Then add the tomatoes and some salt.
  10. When the tomatoes soften, add lemon juice and sugar.
  11. Add 4 cups of water and bring it to a boil. Check the salt.
  12. Now add semolina in batches and mix well as you go so that there are no lumps.
  13. Add the raisins and cashew nuts. Mix and cover the pot with a lid. Let the upma cook on low heat for 5 minutes.
  14. Finish off with fresh coriander leaves.
  15. Rava upma recipe is ready. Serve hot with chai for breakfast. Enjoy.

Step 1

First of all, prepare the ingredients for upma. Chop 1 large onion, 1 medium tomato, crush 6 cloves of garlic and 1 & ½ inch piece of ginger, chop 3 green chilies, and a handful of cilantro. Lay out the tempering and seasoning ingredients and 3 tbsp of ghee/clarified butter.

Step 2

Melt the remaining ghee/clarified butter. Once hot, add ¾ tsp mustard seeds and let them pop. Then the ¾ tsp cumin seeds and let them sizzle. Add 1 tbsp urad dal and fry till it turns light brown.
