  • Eggs - 6, boiled and peeled
  • Oil - 1 tbsp
  • Turmeric - ¼ tsp
  • Byadgi red chili powder - ½ tsp
  • Coriander powder - ½ tsp
  • Salt - to taste
For the gravy
  • Oil - 2 tbsp
  • Cinnamon - 1 inch piece
  • Green cardamoms - 3 to 4
  • Cloves - 2
  • Cumin seeds - 1 tsp
  • Onions - 1 & ½ cups, finely chopped
  • Pureed tomatoes - 1 cup
  • Ginger - 1-inch, finely crushed
  • Garlic - 15 cloves, finely crushed
  • Green chilies - 2, finely chopped
  • Coriander powder - 1 tsp
  • Cumin powder - ½ tsp
  • Turmeric powder - ¼ tsp
  • Byadgi red chili - 1 tsp or to taste
  • Black pepper - ¼ tsp, coarsely crushed
  • Garam masala - ¼ tsp
  • Salt - to taste
  • Cashew nuts - 12, finely ground
  • Kasoori methi - 1 tbsp
  • Coriander leaves - 2 tbsp, finely chopped
  • Hot water - 1 cup
Instructions
  1. Boil and peel eggs. Poke them gently several times with a fork. Heat oil in a non-stick pan/kadhai. Drop in the eggs.
  2. Fry the eggs until they are golden. Add in the salt, turmeric powder, byadgi red chili powder, and coriander powder.
  3. Saute for a few more seconds on low flame. Then switch off the flame.
  4. In another pan or kadhai, heat oil. Add in the whole spices; cumin seeds, cinnamon stick, cloves, and green cardamoms. Let them puff up.
  5. Next, add in the chopped onions and saute until they turn golden.
  6. Add the crushed ginger and garlic and saute until the raw smell goes away.
  7. Tip in the green chilies. Mix.
  8. Pour in the pureed tomatoes and some salt. Saute until the oil separates and the raw smell of tomatoes is gone.
  9. Add the ground spices; turmeric, byadgi red chili, coriander, black pepper, cumin, garam masala. Saute until the masala turns fragrant.
  10. Add the cashew nut powder and saute for a couple of minutes, taking care not to burn the masala.
  11. Add hot water and bring the curry to a boil.
  12. Drop in the eggs and cover the pan. Let the eggs simmer in the curry for 5-7 minutes.
  13. When the oil separates and the curry has thickened, add the fresh coriander and kasoori methi. Give it a final mix.
