Sheera is an Indian sweet prepared from semolina, also known as rava or sooji. There are different names for sheera across different parts of India. There is a slight difference in the recipes from one region to another. Nevertheless, most ingredients to make a sheera are fairly common among all of them.

The Kesari comes from South India and gets its name from the vibrant yellow color that resonates with kesar or saffron. I first got an opportunity to try the authentic pineapple kesari in Bangalore a couple of years ago. There are so many names for the pineapple rava kesari – pineapple sheera, pineapple halwa, pineapple kesari bath. Whatever you call it, it will taste amazing.

You will find many tiffin places in Bangalore selling delicious pineapple rava kesari. It is a popular breakfast and often paired with khara bath. The khara bath is the savoury semolina preparation. The combo of the khara bath and pineapple kesari bath is known as chow chow bath.

First of all, you need to roast the rava or semolina in plenty of ghee. It will get a beautiful pinkish golden color and smell really good.

Next, you cook the pineapple in another pot using some more ghee. It will soften and release it’s juices. Add in the water, saffron, and turmeric. I always try to avoid using food colors. So if you wish to make pineapple kesari without food color, try this trick. Use saffron and a pinch of turmeric to get a gorgeous yellow color.

Then the roasted semolina is added to the boiling water and cooked for a while so that it absorbs all of it. Finally, add sugar to taste and let it melt. Finish the pineapple halwa with green cardamom powder, fried cashew, and raisins. And it’s done. Pineapple halwa is ready. Serve it hot or warm.

Pineapple sheera stays good in fridge for 2-3 days. Microwave a serving for 15 seconds to warm it up any time you want to enjoy it.

Pineapple kesari is usually prepared with water. You can also use milk if you wish to. It will be richer in taste and lighter in color.

A lot of people add artificial food colors to their rava kesari or pineapple kesari. But I always use saffron and I highly recommend that you should too. You can add a pinch of turmeric to accentuate the color of the pineapple kesari.

Pineapple sheera recipe or pineapple kesari recipe is an Indian dessert made from semolina. It has prominent flavour and tanginess of fresh pineapple that makes it so unique. Pineapple kesari is the perfect ending to any meal.

Ingredients
To roast the Semolina
  • Ghee - ½ cup
  • Fine semolina / bareek suji - 1 cup
Other Ingredients
  • Ghee - 1 tbsp + 2 tbsp
  • Fresh pineapple - 1 cup, chopped
  • Sugar - 1 & ¼ cup or to taste
  • Water - 3 cups
  • Green cardamom powder - ¼ tsp
  • Kesar/saffron - 20 to 25 strands
  • Turmeric - a pinch
  • Cashews - ¼ cup, halved
  • Raisins - 2 tbsp
Instructions
  1. To make pineapple halwa, start off by frying the nuts and roasting the semolina or rawa. Take a pan or a kadhai. Heat ½ cup of ghee in the kadhai. Add in the cashews and fry them until golden. Take them out in a bowl. Set aside.
  2. Next, add the raisins and fry them for a few seconds until fluffy. Take them out in a a bowl too. Set aside.
  3. In the remaining ghee, add in the semolina/rava. Mix.
  4. Roast the rava on low to medium heat stirring it continuously until it turns pinkish and fragrant. This will take 10-12 minutes.
  5. In the meantime, let's cook the pineapple. Heat 1 tbsp ghee in a pot or pan. Add in the pineapple.
  6. Saute on low to medium heat for 2-3 minutes of until the pineapple softens. Stir often or the pineapple would stick to the bottom of the pot and burn.
  7. Add in the water, turmeric, and saffron/kesar. Stir.
  8. Bring it to a boil. Let it simmer for 5 minutes.
  9. Turn the heat to low. Add little by little of the roasted rava to the pineapple water. Be careful because the mixture is very hot and bubbles up.
  10. Mix well so that there are no lumps.
  11. When the rava has absorbed all the water, add in the sugar.
  12. Mix well. Let the sugar melt. The pineapple kesari will look glossy now.
  13. Cover and cook the kesari on low heat for 2 minutes.
  14. Then add the green cardamom powder, fried cashews and raisins. Add the 2 tbsp ghee in the end. It will help the pineapple kesari to come together.
  15. Mix the pineapple kesari well.
  16. Pineapple kesari or pineapple sheera is ready. Serve hot or warm. Enjoy!

In the remaining ghee, add 1 cup fine semolina/ bareek rava.

Mix. Roast the rava on low to medium heat stirring it continuously until it turns pinkish and fragrant. This will take 10-12 minutes.

In the meantime, let’s cook the pineapple. Heat 1 tbsp ghee in another pot or pan. Add in 1 cup chopped fresh pineapple.

Saute the pineapple on low to medium heat for 2-3 minutes of until it softens. Stir often or the pineapple would stick to the bottom of the pot and burn.

Add in 3 cups of water, a pinch of turmeric, and 20-25 strands of saffron/kesar. Stir. I have not added any artificial food color to this pineapple kesari. But it still looks vibrant.

Bring it to a boil. Let it simmer for 5 minutes.

On the other side, the rava has roasted nicely in the meantime. Turn the heat off.

Add little by little of the roasted rava to the simmering pineapple water. Be careful because the mixture is very hot and bubbles up.

Mix well so that there are no lumps.

When the rava has absorbed all the water, add in 1 & 1/4 cups of sugar. Adjust the quantity of sugar to suit your taste.

Mix well. Let the sugar melt. The pineapple kesari will look glossy now.

Cover and cook the kesari on low heat for 2 minutes.

Then add 1/4 tsp green cardamom powder, fried cashews and raisins. Add the 2 tbsp ghee in the end. It will help the pineapple kesari to come together.
