So I have used a wide aluminum pan instead. This pan is wide enough to cook comfortably for 4-5 people. You need the surface to be wide so that you can mash the pav bhaji properly.

Ingredients
To Prepare the Veggies
  • Cauliflower - 1 cup, chopped
  • Potatoes - 4 medium, diced
  • Peas - ¾ cup
  • Water - 2 cups or as needed
  • Some salt
For Making the Bhaji
  • Onions - 1 & ½ cups, finely chopped
  • Capsicum - ¾ cups, finely chopped
  • Tomatoes - 1 cup, finely chopped
  • Ginger - 1-inch piece, ground to paste
  • Garlic - ¼ cup, ground to paste
  • Green chilies - 3, finely chopped
  • Coriander leaves - 2 tbsp
  • Butter - 2 tbsp
  • Oil - 6 tbsp
  • Cumin seeds - 1 tsp
  • Kasoori methi - ½ tbsp
  • Byadgi red chili powder - 2 tbsp
  • Coriander powder - ½ tbsp
  • Pav bhaji masala - 1 tbsp
  • Salt - to taste
  • Water - 1 & ½ cups

  • Pav
  • Butter
  • Pav bhaji masala
Instructions
  1. Combine cauliflower, potatoes, and peas in a pressure cooker. Add water and salt to them. Pressure cook for 2 whistles.
  2. Once the pressure is released, scoop out the veggies in a bowl and save the stock.
  3. In a wide pan, heat 3 tbsp oil. Add cumin seeds to it and once they splutter, add in the onions.
  4. When the onions begin to turn golden, add the ground ginger-garlic, and green chilies. Saute until the raw smell of garlic is gone.
  5. Add the capsicum and saute until it's tender.
  6. Next, add the tomatoes, boiled vegetables, and some salt. Mix.
  7. Mash the veggies and the tomatoes with a masher to form mashed veggies.
  8. Saute the mashed veggies for 3-4 minutes. Then arrange it along the sides of the pan, creating a space in the middle.
  9. Add the remaining 3 tbsp oil in the center and let it warm up a bit. Add the byadgi red chili powder, pav bhaji masala, coriander powder, and kasoori methi to the warm oil. Saute the spices for a few seconds until fragrant.
  10. Add the stock (which was around ½ cup) and 1 & ½ cup fresh water. A total of 2 cups water is enough to achieve the right consistency. Give the water and the spices a stir.
  11. When the water comes to a boil, mix in the mashed veggies that was arranged along the sides of the pan.
  12. Let the pav bhaji come to a boil. Then let it simmer for 10-12 minutes. Keep mashing the pav bhaji with the masher while it simmers to make it smoother.
  13. Finally, when you see some oil separating along the sides of the pan, add some butter and coriander leaves. The bhaji is ready.
  14. Now to prepare the pavs/dinner rolls, splice them across the center but not all the way through. Open the pav.
  15. Melt some butter on the hot tawa/pan. Add 2-4 pinches of pav bhaji masala and place the pav on the tawa, inner side down.
  16. Flip the pavs and toast on the other side using some more butter until golden brown and crunchy.
  17. Place the pavs in the pav bhaji plate along with the bhaji. Pav bhaji recipe is ready.
  18. Serve the pav bhaji with chopped onions, a lemon wedge, and some delicious garlic chutney.

The pav bhaji preparation is very easy. Chop the veggies and lay out the spices.

Combine 1 cup cauliflower, 4 medium potatoes diced, and 3/4 cup peas in a pressure cooker. Add 2  cups water and some salt to them. Pressure cook for 2 whistles.
