I always use homemade paneer for making bhurji. It’s softer, creamier, and tastier. The paneer is scrambled and sauteed with onions, readymade tomato puree, spices, and cashew paste. used a piece of hot coal to lend paneer bhurji recipe the mesmerizing smokiness. It’s an optional step but I highly recommend it. That’s how you bring in the tikka-like smokiness in your paneer bhurji sandwich.

I was feeling fancier and so I made a sub too. I am in love with one particular Subway sandwich recipe at Subway. It’s the paneer tikka sub that I absolutely adore! You could use pav or dinner rolls instead of bread; whatever you like.

Is kasuri methi different from our normal methi leaves dried? Can we just dry the methi leaves and use it as kasuri methi?

I have already tried that. The results weren’t that great. I recommend you buy Everest kasoori methi. It’s very good quality and very flavourful.

    Ok. Thanks.
I was wondering what people used before these packet masala became a normal?
Was kasuri methi used traditionally in Punjabi cooking or is it a later addition.

Hi Pallavi. From what I know, kasoori methi is a part of the traditional Punjabi cooking. However, it was made locally like any other spices. I guess that the general population like you and I in other parts of India (I am from Maharashtra) came to know about it later. I have tasted kasoori methi in restaurant foods since I was a kid but didn’t know what exactly it was. I came across it several years later through cookery shows, bought it and then realized that restaurants have been using it since a long time. Since then I have noticed that the packaged one is getting increasingly popular.

Hi Kesar. First of all, thank you.
Now coming to your question, the gravy is thick because of the cashew paste. It keeps everything together, which is why, your sandwich won’t go soggy. 🙂
