Dhaba style mutter paneer recipe (ढाबा स्टाइल मटर पनीर ) or matar paneer ki sabji is one of the favorite choices of Indian curries for most vegetarians when eating out. The taste, the vibe, and the method of preparation of mutter paneer recipes varies from one place to another. However, the food at some places has a very distinctive charm.

Let’s talk about dhabas today. A dhaba (ढ़ाबा) is a humble roadside eatery that is usually situation along the highways, usually the long routes. These eateries serve regional cuisine and are primarily meant to facilitate as truck stops. But they end up attracting a lot of other travelers too, who are passing by. That’s because the food at these dhabas though humble is hearty and incredibly tasty. The dhaba food is rustic, and instinctively enticing; especially the food at the ultrafamous Punjabi dhabas.

Today’s recipe is one such delight that I have thoroughly enjoyed several times at the numerous Punjabi dhabas. It’s the dhaba style mutter paneer and it’s very different than the Restaurant-Style Matar Paneer Recipe that I had shared previously, which you can check out here. This mutter paneer recipe has a characteristic texture because of fast cooking on the high flame. The cooks at the dhaba use an iron pan that conducts heat excellently, and hence the food gets ready within minutes. This is how the dhabas are able to serve their customers so quickly.

Here is the picture of the iron frying pan that you will see at the dhabas. It has a long handle with a wooden extension towards the end. You can find it easily at the shops that sell utensils meant for commercial purposes. That’s where I got mine. It’s a very cheap utensil but it is a great investment if you wish to master dhaba-style cooking. Dhaba-style cooking it very practical and time-saving. These frying pans are available in various sizes. The one I have here costs INR 230 (USD 3.6) and is large enough to cook a curry for 4-5 persons.

Here’s a very important thing. When you use such a thin iron frying pan, you will definitely get a taste and texture that’s different from regular cooking, which is amazing and exactly what we are looking for. But, you must stir the food almost continuously to prevent the food from burning. What I am telling you might sound complicated to you right now, but after cooking food in dhaba-style utensils just 2-3 times, you will get used to them pretty easily and in no time.

The dhabas have a massive daily turnover, which is why they have different kinds of gravies ready. The dhaba style mutter paneer recipe s made with brown gravy that consists of onions, tomato, ginger, garlic, and cashews. You can prepare it as you go in a smaller quantity depending on the number of servings. Overall, it is a very easy mutter paneer recipe.

Dhaba style mutter paneer curry is a hearty recipe that has an air of humbleness yet an element of richness. Soft, melt-in-mouth paneer and tender green peas are cooked in a fragrant and tantalizing gravy and served with naan or roti at dhabas, the modest roadside eateries along the highways.

Ingredients
  • Onions - 2 medium, finely sliced
  • Ginger-garlic - 1 tbsp, freshly crushed
  • Tomato - 2 medium, finely chopped
  • Frozen peas - 1 cup
  • Paneer - 200 grams, cubed
  • Cashews - 15, boiled
  • Water - 1 cup
  • Oil - 3 tbsp, divided
  • Cumin seeds - ¾ tsp
  • Green cardamom - 3
  • Cloves - 2
  • Byadgi red chili powder - 1 tsp
  • Turmeric - ¼ tsp
  • Coriander powder - 1 tsp
  • Kitchen King Masala - ½ tbsp
  • Salt - to taste
  • Kasoori Methi - ½ tbsp, lightly roasted and crushed between palms
  • Coriander leaves - 2 tbsp, finely chopped
  • Green chilies - 2, split lengthwise
Instructions
  1. Start by heating 1 tbsp oil in the frying pan and tossing in the sliced onions.
  2. Saute until they turn golden. Remove half of the sauteed onions into a bowl. Keep it aside.
  3. To the remaining sauteed onions in the pan, add the crushed ginger and garlic. Saute until the raw smell goes away.
  4. Next, add in the tomatoes and some salt. Cook the tomatoes until they soften.
  5. Switch off the heat and let the onion-tomato mixture cool down. Transfer it to the grinder. Add boiled cashews to it. Grind everything to a smooth paste without using any water.
  6. Heat the remaining 2 tbsp oil in the same frying pan. Add the green cardamoms, cloves, and cumin seeds. The the spices sizzle and swell up.
  7. Add in the ground onion-tomato paste, the reserved sauteed onions, turmeric, byadgi, red chili powder, coriander powder, and kitchen king masala.
  8. Mix everything and saute it really well until the oil begins to separate.
  9. Then add in the thawed frozen peas and saute them along with the masala for a minute.
  10. Add water and bring the curry to a boil. Let it simmer for 2-3 minutes until the oil begins to separate again.
  11. Add the paneer cubes and give it a mix. Simmer the mutter paneer gravy for another minute.
  12. Finally, add the kasoori methi, coriander leaves, and green chilies. Mix.
  13. Turn the heat off. Mutter paneer recipe is ready.
  14. Serve the mutter paneer curry with some hot butter naans and sirke wale pyaaz. Enjoy!

Next, add in 2 medium tomatoes finely chopped and some salt. Cook the tomatoes until they soften.

Switch off the heat and let the onion-tomato mixture cool down.

Transfer it to the grinder. Add 15 boiled cashews to it.

Grind everything to a smooth paste without using any water.

Heat the remaining 2 tbsp oil in the same frying pan. Add the 3 green cardamoms, 2 cloves, and 3/4 tsp cumin seeds. The the spices sizzle and swell up.

Add in the ground onion-tomato paste, the reserved sauteed onions, 1/4 tsp turmeric, 1 tsp byadgi red chili powder, 1 tsp coriander powder, and 1/2 tbsp kitchen king masala.

Mix everything and saute it really well until the oil begins to separate. Then add in 1 cup thawed frozen peas and saute them along with the masala for a minute.

Add 1 cup water to adjust the consistency of the curry. Bring the curry to a boil. Let it simmer for 2-3 minutes until the oil begins to separate again.

Add 200 grams paneer cubes and give it a mix. Simmer the mutter paneer gravy for another minute.

Step 15

Finally, add 1/2 tbsp kasoori methi that has been lightly roasted and crushed between your palms, 2 tbsp finely chopped coriander leaves, and 2 green chilies split lengthwise. Mix.

Step 16

Turn the heat off. Mutter paneer recipe is ready.
