A few years ago, mushrooms were perceived as exotic. However, the times are changing and mushrooms have gradually been finding their way into the mainstream Indian cooking and the hearts of the desi foodies. I have loved mushrooms all my life. My first encounter with them goes way back to when I was four years old. I had tasted mushroom soup for the first time in a restaurant we frequented and I was hooked. Then I got an opportunity to taste them in tawa sabzi, this time at a fancy restaurant. My love for them only grew stronger. Today’s recipe is something that the mushroom lovers would enjoy. It’s the super-delicious, quick & easy mushroom gravy recipe (मशरुम ग्रेवी रेसिपी) that I often serve with naans.

The gravy is made with onions, tomatoes, ginger-garlic, and cashews. Sauteing the mushrooms is very important. Yo just cannot toss the raw mushrooms into the simmering gravy. Sure they will get done, but their beautiful flavors would remain shrouded. Sauteed mushrooms have a better texture and lend a fuller flavor to the gravy. I have used Suhana brand’s Shahi Garam Masala for this recipe because its flavor pairs excellently with mushrooms. However, if you cannot find it, you may use the regular Punajbi garam masala for making this recipe. Now let’s take a look at the ingredients and the preparation.

Mushroom Gravy is an easy restaurant-style recipe consisting of sauteed mushrooms simmered in a very rich gravy. Served with butter naans, the combo is a real treat for the taste buds.

Ingredients
  • Mushrooms - 200 grams, sliced
  • Onions - 1 medium, finely chopped
  • Tomatoes - 1 medium, finely chopped
  • Ginger-garlic - 1 tbsp, finely crushed
  • Green chilies - 1, spliced lengthwise
  • Coriander leaves - 2 tbsp, finely chopped
  • Red chili powder (byadgi) - ½ tbsp
  • Coriander powder - 1 tsp
  • Cumin powder - ½ tsp
  • Suhana Shahi Garam Masala - ¼ tsp
  • Salt - to taste
  • Bay leaf - 1 small
  • Green cardamom - 2
  • Cumin seeds - ½ tsp
  • Fresh cream - 2 tbsp
  • Cashews - 10, boiled
  • Kasoori methi - ½ tbsp, lightly roasted and crushed between palms
  • Water - ¾ cup
  • Oil - 3 tbsp
Instructions
  1. To make mushroom gravy, heat 2 tbsp oil in a skillet. Add the onions and saute until they turn golden.
  2. Add the ginger-garlic and saute until the raw smell disappears and it becomes fragrant.
  3. Toss in the tomatoes and some salt. Cook until the tomato turns mushy.
  4. Turn the heat off and let the mixture cool.
  5. Transfer it to the grinder and add boiled cashews to it. Grind it to a very smooth paste.
  6. Heat the remaining oil in the same skillet. Add cumin seeds and let them sizzle. Then add the bay leaf and green cardamoms and let them sizzle for a few seconds.
  7. Add the mushrooms and saute them on low to medium heat. Stir often. The mushrooms will lose the moisture and become browned and fragrant.
  8. Add the ground onion-tomato paste and ground spices; byadgi red chili powder, coriander powder, and cumin powder.
  9. Mix well and saute the mushrooms with the spices until oil begins to separate.
  10. Then add water to make the curry. I had a couple of tablespoons of water in which the cashews were boiled. I added in that as well. The total amount of liquid should be ¾ cups.
  11. When the curry comes to a boil, let it simmer for 5 minutes. When it thickens, finish it off with kasoori methi, coriander leaves, green chili, garam masala, and fresh cream.
  12. Give it a quick mix and turn the heat off. Restaurant style mushroom gravy recipe is ready.
  13. Serve it hot with butter naans. Enjoy!

Start off by heating 2 tbsp oil in a skillet/kadhai. Add 1 medium onion finely chopped and saute until they turn golden.

Add 1 tbsp ginger-garlic that has been finely crushed in mortar & pestle. Saute until the raw smell disappears and it becomes fragrant.

Toss in 1 medium tomato finely chopped and some salt. Cook until the tomato turns mushy.

Turn the heat off and let the mixture cool.

Transfer it to the grinder and add 10 boiled cashews to it. Grind it to a very smooth paste.

Heat 1 tbsp oil in the same skillet. Add 1/2 tsp cumin seeds and let them sizzle. Then add 1 small bay leaf and 2 green cardamoms and let them sizzle for a few seconds.

Add 200 grams of sliced mushrooms and saute them on low to medium heat. Stir often. The mushrooms will lose the moisture and become browned and fragrant.

Add the ground onion-tomato paste and ground spices; 1/2 tbsp byadgi red chili powder, 1 tsp coriander powder, and 1/2 tsp cumin powder.

Mix well and saute the mushrooms with the spices until oil begins to separate.

Then add water to make the curry. I had a couple of tablespoons of water in which the cashews were boiled. I added in that as well. The total amount of liquid should be 3/4 cups.

When the curry comes to a boil, let it simmer for 5 minutes. When it thickens, finish it off with 1/2 tbsp kasoori methi (lightly roasted and crushed between your palms), 2 tbsp finely chopped coriander leaves, 1 slit green chili, 1/4 tsp Suhana Shahi Garam Masala, and 2 tbsp fresh cream.

    yummy looking gravy,, i have a question..why didnt you add turmeric?

      Hello Kavita. I didn’t want the curry to turn bright yellow. Also, the flavour of turmeric doesn’t necessarily enhance the flavour of the dish. So I have eliminated it. 🙂 I hope this helps.
