This sprouts curry recipe has an onion-tomato base. It has ginger, garlic, green chilies, and fresh coriander to impart flavor to the dish. The use of spices is minimal, which is why the curry is so light. Their is some broth as well. If you like, you can make this curry dry by adding less water. The mixed sprouts are first sauteed with the onions, tomatoes and spices, and then pressure cooked, making them absorb all the flavors so well.

Ingredients
  • Mixed sprouts (recipe here) - 3 cups
  • Onions - 2 medium, finely chopped
  • Tomatoes - 2 medium, finely chopped
  • Garlic - 10 cloves, medium-sized, finely crushed
  • Ginger - 1-inch piece, finely crushed
  • Green chilies - 2, slit lengthwise
  • Fresh coriander - a handful, finely chopped
  • cumin seeds - 1 tsp
  • Oil - 3 tbsp
  • Turmeric powder - ¼ tsp
  • Red chili powder - ½ tbsp or to taste
  • Coriander powder - ½ tbsp
  • Chole masala - 1 tbsp or to taste (recipe here)
  • Garam masala - ¼ tsp
  • Salt - to taste
  • Water - 4 cups or as needed
Instructions
  1. To make the mixed sprouts curry recipe, heat oil in a pressure cooker. Add cumin seed and let them sizzle.
  2. Then toss in the onions and saute them until golden.
  3. Add the crushed ginger and garlic and saute until the raw smell is gone.
  4. Next, add the tomatoes and some salt. Cook the tomatoes until they turn mushy and oil begins to separate.
  5. Add the ground spices; turmeric, red chilies, chole masala, coriander, and garam masala. Saute for a few seconds.
  6. Add the mixed sprouts and saute it for 3-4 minutes. Sprinkle some water every time the mixture gets dry to prevent burning.
  7. Add water and adjust the salt. Close the pressure cooker and let the pressure build. Then turn the heat to low and let the curry cook for 15 minutes; Alternatively, cook the sprouts curry for 5 whistles or until the sprouts are cooked.
  8. Turn the heat off and let the pressure release. Then open the cooker.
  9. Turn the heat back on. Add the green chilies and coriander leaves and bring the curry to a boil once again.
  10. Mixed sprouts curry recipe is ready. Serve it hot with jeera rice and roti.

Step 1

To make the mixed sprouts curry recipe, heat 3 tbsp oil in a pressure cooker. Add 1 tsp cumin seed and let them sizzle.

Then toss in 2 medium onions, finely chopped, and saute them until golden.

Crush 1-inch ginger and 10 medium cloves of garlic in the mortar and pestle. Add them in and saute until the raw smell is gone.

Next, add 2 medium tomatoes, finely chopped, and some salt. Cook the tomatoes until they turn mushy and oil begins to separate.

Add the ground spices; 1/4 tsp turmeric, 1/2 tbsp (or to taste) red chili, 1 tbsp chole masala, 1/2 tbsp coriander, and 1/4 tsp garam masala. Saute for a few seconds.

Add 3 cups mixed sprouts and saute it for 3-4 minutes. Sprinkle some water every time the mixture gets dry to prevent burning.

Add 4 cups of water and adjust the salt. Close the pressure cooker and let the pressure build. Then turn the heat to low and let the curry cook for 15 minutes; Alternatively, cook the sprouts curry for 5 whistles or until the sprouts are cooked. Turn the heat off and let the pressure release.
