Both the rind and the pulp of kokum have a very sour taste. The rinds of the kokum fruit are dried in the sun and you get the dried kokum, which is widely available in the market.

The dried kokum is cured with salt for a longer shelf life and it has a blackish-purple color. Kokum has a cooling efficacy, which makes it an excellent food to by consumed in the summers. You can enjoy kokum’s ability to cool the body during summers in the form of kokam sharbat and solkadi.

The scientific name of kokum is Garcinia indica and it belongs to the mangosteen family. It is also known as amsol in the local language. Given it’s sour taste, kokum has a special place in the Maharashtrian and Goan cuisines as a souring agent. The kokam sharbat recipe is flexible in terms of the kind of kokam you use, fresh or dried. The fresh kokam is sourer than the dried variety. So you may need more sugar if you are using fresh kokam. So firstly, the kokum is boiled along with water, sugar, black salt, and roasted cumin powder. It is then pureed using a hand blender. Finally, the mixture is strained to separate the pulp from the syrup.

The kokum syrup or concentrate is supposed to be stored in a glass jar or bottle in the fridge. To make kokam sharbat, you take a 2-3 tablespoons of kokam syrup in a glass and top it up with ice and water. Lastly, give it a stir and you have yourself a glass of refreshing and healthy kokam sharbat.

Kokam has several health benefits. Apart from cooling the body, it is rich in vitamin C and antioxidants. It is good for the digestive system and suppresses appetite. Kokam is good for cardiovascular health as well. It’s anti-inflammatory properties make kokum a “healing spice” in a true sense.

Ingredients
For making the Kokam Concentrate
  • Dried kokum - 1 cup (110 grams)
  • Sugar - 1 & ½ cups (350 grams)
  • Water - 2 cups
  • Roasted cumin powder / jeera powder - 1 tsp
  • Black salt / Kala namak - ½ tsp
Other Ingredients
  • Water
  • Ice
  • Mint - for garnish
Instructions
  1. To make the kokam syrup or kokam concentrate, combine dried kokam and water in a pot. Let it soak for 15 minutes.
  2. Add in the sugar, roasted cumin powder / jeera powder, and black salt. Give it a stir. If your kokam is exceptionally sour, add more sugar to balance the taste.
  3. Keep the pot on stove and bring the kokam mixture to a boil. Then let it simmer for 10 minutes. Stir often.
  4. Turn the heat off and blend the kokam mixture with a hand blender. Be careful because it is hot.
  5. Strain the mixture to separate the kokam pulp from the kokum juice.
  6. Let the kokam concentrate cool completely. Transfer it to an airtight glass bottle and store it in the fridge.
  7. To make kokam sharbat, take 2-3 tablespoons of the kokum concentrate in a glass. Top it up with water and ice.
  8. Decorate it with a sprig of mint.
  9. Kokam sharbat recipe is ready. Serve it chilled. Enjoy!
