Imli (इमली), also known as tamarind in English, is a very commonly used ingredient to a make dipping sauce or chutney. Imli ki chatni (इमली की चटनी) is an amazing addition to the chaat recipes and a perfect accompaniment for Indian street food, and Indian evening snacks recipes as well. A blend of many tastes – sweet, sour and hot, it boasts an intense earthiness and tang. This is a very easy imli chutney recipe for samosa, muthia, dahi vada that you can make within minutes. It is thick dipping sauce with a very smooth texture and sharp, piquant taste. It puts a zing on your street food and Indian snacks like no other dip. It is precisely-flavored tamarind chutney for panipuri, dahipuri, sevpuri, and bhelpuri.

Now, coming to the choice of ingredients that you could use to make the imli chutney sweet. You can pick any that you like from dates/khajur, jaggery/gur, and sugar. Personally, I like the tamarind chutney made with jaggery a lot. It’s because of the warmth from the jaggery that you can feel on the palate. The one with dates has a very distinct flavor and a prominent taste from dates. The one with sugar is my last preference. It’s not as good as the other two if you ask me.

In this recipe, I have used jaggery. If you do not have jaggery, you could substitute it with sugar. Let’s begin with the imli ki meethi chutney recipe with step by step pictures.

khatti meethi imli chatni recipe – a zingy North-Indian style dip made from tamarind and jaggery (imli and gud), with prominent flavours of from red chili and cumin.

Ingredients
  • De-seeded tamarind – 1 cup, rinsed lightly
  • Jaggery – 2 cups, grated
  • Water – 1 and ½ cups
  • Black salt – ½ tsp
  • Salt –to taste
  • Red chili powder –2 tsp
  • Cumin powder – ½ tsp
Instructions
  1. To make the imli ki chutney, start off by soaking the imli. In a saucepot, take water and add tamarind to it. Let it soak for 30 minutes.
  2. Keep the saucepot on the flame and bring the mixture to a boil. Let it simmer for 6-7 minutes.
  3. Switch off the heat and let the mixture cool off a bit till it’s easier to handle.
  4. Strain the tamarind mixture to extract the pulp. Use a little water if need be. Discard what’s left in the sieve.
  5. Transfer the tamarind pulp back to the saucepot and keep it back on the cooktop on medium flame. Add the jaggery or gur and mix. Stir and cook the chutney till the jaggery melts.
  6. Add the salt, black salt, cumin powder and red chili powder. Mix well.
  7. Taste the chutney. Be very carefully as the chutney is very hot. Adjust the seasoning if needed. Let it simmer for 2-3 minutes.
  8. Switch off the flame and let the chutney cool down. Transfer it to a clean and dry bottle and store in the refrigerator for 6 weeks.
  9. Imli ki khatti meethi chatni is ready.
  10. Serve the sweet tamarind chutney with samosa, dahi vada or use it to make sandwiches or chaat recipes.

Step 1

Transfer the tamarind pulp back to the sauce pot and keep it back on heat on medium flame. Add the 2 cups jaggery or gur and mix. Stir and cook the chutney till the jaggery melts.

Add the salt to taste, 1/2 tsp black salt, 1/2 tsp cumin powder and 2 tsp red chili powder. Mix well.

Taste the imli chutney. Be very carefully as the chutney is very hot. Adjust the seasoning if needed. Let it simmer for 2 more minutes.

      Yes. It works great for bhel and dahi vada too. You can dilute it in cold water and use it for pani puri also.
