Kadhi is a light and delicious side dish to rice and khichdi. It is a must have at least once a week at my place. Gujarati kadhi is one such variant that I prepare often, especially with panchmel khichdi, which is Gujarati style khichdi made with five kinds of grains; rice and four lentils.

Kadhi and khichdi is a classic combo. The sweet and slightly sour kadhi pares so well with hot, soft khichdi. It is a nutritious meal, and a comforting one too especially during the winters. Kadhi-khichdi is a good choice for lunch on a summer afternoon too.

Gujarati kadhi is very fragrant from the whole spices that go into it. It is slightly on the sweeter side. And this gujarati kadhi is the same that you get in restaurants serving gujarati thali.

To make gujarati kadhi recipe, you need sour curd; not way too sour though. The curd, sugar, and besan (chickpea flour) are whisked together until smooth. Next, you add the water to adjust the consistency. A tadka or tempering is prepared with the usual ingredients; cumin and mustard seeds, asafetida, curry leaves, and ginger and garlic. In addition, the gujarati kadhi reccipe calls for methi dana (fenugreek seeds), whole red chilies, cloves, and cinnamon.

In goes the curd, and besan mixture. You need to stir the kadhi until it comes to a boil, else it might curdle. Add salt and let it simmer for a few minutes.Garnish with coriander. That’s it. Kadhi is ready! Easy peasy!

Ingredients
  • Curd - 1 cup, whisked
  • Besan - ¼ cup
  • Water - 3 to 3.5 cups
  • Sugar - 1 tbsp
  • Salt - to taste
  • Ghee - 2 tbsp
  • Cloves - 3
  • Cinnamon stick - ½ inch piece
  • Cumin seeds - ¾ tsp
  • Dried whole red chilies - 3
  • Mustard seeds - ¾ tsp
  • Hing/ Asafetida - ¼ tsp
  • Methi dana / Fenugreek seeds - 15 seeds
  • Curry leaves - 1 sprig
  • Green chilies - 2
  • Garlic - 10 medium cloves
  • Ginger - ½ inch piece
  • Coriander leaves - 2 tbsp, finely chopped
Instructions
  1. To make gujarati kadhi recipe, first of all crush the garlic, green chili, and ginger together in a mortar and pestle.
  2. Combine curd, besan, and sugar in a mixing bowl. Whisk everything until smooth. There should be no lumps.
  3. Add water and whisk again.
  4. Now heat ghee in a pot or kadhai. Add in the mustard seeds and let them splutter. Add the cumin seeds and let them sizzle. Then add the asafetida and let it sizzle too.
  5. Add the fenugreek seeds, cloves, cinnamon, and dried whole red chilies. Saute for a few seconds until fragrant. Take care not to burn the spices.
  6. Add in the curry leaves, crushed ginger, garlic, and green chili. Mix and saute until the raw smell goes away.
  7. Add in the curd and besan mixture.
  8. Bring it to a boil. Keep stirring constantly or the kadhi could curdle.
  9. Once the kadhi comes to a boil, add salt.
  10. Simmer for 8-10 minutes. Stir often.
  11. Switch off the flame and garnish with coriander leaves. Gujarati kadhi is ready.
  12. Serve hot with khichdi or rice. Enjoy!

To make gujarati kadhi recipe, first of all crush 10 medium-sized cloves of garlic, 2 green chilies, and 1/2-inch ginger together in a mortar and pestle.

Combine 1 cup curd, 1/4 cup besan/chickpea flour, and 1 tbsp sugar in a mixing bowl.

Whisk everything until smooth. There should be no lumps.

Add 3 to 3.5 cups water depending on how thick you like your kadhi. Whisk again.

Now heat 2 tbsp ghee in a pot or kadhai. Add in 3/4 tsp mustard seeds and let them splutter. Add 3/4 tsp cumin seeds and let them sizzle. Then add 1/4 tsp asafetida and let it sizzle too.

Add about 15 fenugreek seeds, 3 cloves, 1/2-inch piece of cinnamon, and 3 dried whole red chilies. Saute for a few seconds until fragrant. Take care not to burn the spices.

Add in 1 sprig of curry leaves, crushed ginger, garlic, and green chili.

Mix and saute until the raw smell goes away.
