Gobi Manchurian, or Cauliflower Manchurian as some people call it, is a very famous starter recipe. It’s an Indo-Chinese stir-fry recipe that features a delectable blend of so many kinds of tastes. The Gobi Manchurian recipe basically consists of deep-fried cauliflower florets that are then added to the gravy that is just enough to coat the florets. Since the cauliflower is coated in batter and very crispy, you need the gravy to me saucy. Otherwise, your Gobi Manchurian would turn out very dry.

Sauces for Making Gobi Manchurian Recipe

The sauces that go into making the Gobi Manchurian gravy are the soul of this recipe. You get a very distinctive taste that feels like a party in your mouth when you use these sauces. These are the ingredients that no high-end restaurant would ever tell you about. The names of these sauces might sound a little fancy, but you would love them if you already are able to appreciate the umami flavors of the cuisine. I highly recommend the brand Lee Kum Kee since their sauces are authentic and the best.

So, you will need light soy sauce, black bean sauce, and hoisin sauce. You can find all of these on Amazon India. Do not use dark soy sauce else it will ruin the color of your Gobi Manchurian Recipe. Do not black bean garlic sauce instead of black bean because that would be way too strong, overpowering other flavors of the dish. The hoisin sauce is a great addition and its sweetness ups the ante like nothing else. You will also need some schezwan sauce too. I have used my homemade schezwan sauce.

If you ask me, I feel that the Manchurian gravy is a delicious fusion of chilli, schezwan, and kung pao gravies.

Ingredients
For Marinating the Cauliflower
  • Cauliflower/Gobi - 250 grams, cut into small florets, rinsed & dried
  • Cornstarch – ¼ cup
  • Salt – to taste
  • Black pepper – ½ tsp, freshly ground
  • Ginger-garlic paste – 2 tbsp, freshly ground
For Making the Batter
  • All-purpose flour/Maida – ¾ cup
  • Cornstarch – ½ cup
  • Oil – ½ tbsp
  • Salt – to taste
  • Black pepper – ½ tsp, freshly ground
  • Water – ½ to ⅓ cup
For Making the Manchurian Sauce
  • Oil – 2 tbsp
  • Spring onion whites – ½ cup
  • Spring onion greens – ¼ cup
  • Green chilies – 2 tbsp or to taste, finely chopped
  • Ginger – ½ tbsp, grated
  • Garlic – 2 tbsp, minced
  • Capsicum – ½ cup, chopped
  • Light soy sauce – 1 tbsp
  • Vinegar – 1 tsp
  • Schezwan sauce – 2 tbsp
  • Hoisin sauce – ½ tbsp
  • Black bean sauce – ½ tbsp
  • Salt – to taste
  • MSG – ½ tsp
  • Black pepper – ½ tsp, freshly ground
  • Cornstarch slurry – 1 tsp cornstarch + ½ cup water
Instructions
  1. Start off by marinating the cauliflower. Make sure you dry it very well after rinsing it. Combine the cauliflower, salt, freshly ground black pepper, cornstarch, and freshly ground ginger-garlic paste.
  2. Mix well. Let it rest for 10-15 minutes in the refrigerator.
  3. In the meanwhile, make the batter. Combine all-purpose flour/maida, cornstarch, salt, freshly ground black pepper, and oil in a mixing bowl.
  4. Add water to it to make a thick, viscous, and flowing-consistency batter.
  5. Add the marinated cauliflower to the batter. Heat sufficient oil in a skillet in a 180° C.
  6. Carefully drop the cauliflower florets one by one into the hot oil.
  7. Flip the cauliflower once the underside sets. The cauliflower florets would stick to each other. Separate them with the slotted spoon as you stir them.
  8. Continue to fry the cauliflower on low heat for the next 2-3 minutes until it’s golden and crispy.
  9. Drain the cauliflower and remove it onto a plate.
  10. Now let’s make the sauce. Preheat a wok on high flame. Add oil to it. Toss in the green chilies, ginger, and garlic. Sauté them for a few seconds.
  11. Add the spring onion whites and sauté for few more seconds.
  12. Then add the capsicum and sauté for a minute.
  13. Season with salt, freshly ground black pepper, and MSG. Mix.
  14. Now add the vinegar and sauces; light soy, schezwan, hoisin, black bean. Mix well.
  15. Add the cornstarch slurry. Bring the sauce to a boil.
  16. Turn off the heat. Add in the fried cauliflower. Mix well.
  17. Garnish spring onion greens. Gobi Manchurian is ready. Serve hot. Enjoy!

Step 1

Prepare the Gobi Manchurian ingredients. First, the cauliflower needs to be marinated.

Combine 250 grams cauliflower cut into small florets, ¼ cup cornstarch, salt to taste, ½ tsp freshly ground black pepper and 2 tbsp freshly ground ginger-garlic paste. Make sure you have dried the cauliflower very well after rinsing it.

In the meanwhile, gather the ingredients to make the batter.

Combine ¾ cup all-purpose flour/maida, ½ cup cornstarch, salt to taste, ½ tsp freshly ground black pepper, and 1 tbsp oil in a mixing bowl.

Add ½ to 1/3 cup water to it to make a thick, viscous, and flowing-consistency batter.

Add the marinated cauliflower to the batter. Heat sufficient oil in a skillet in a 180° C.

Carefully drop the cauliflower florets one by one into the hot oil. Flip the cauliflower once the underside sets.

The cauliflower florets would stick to each other. Separate them with the slotted spoon as you stir them. Continue to fry the cauliflower on low heat for the next 2-3 minutes until it’s golden and crispy.

Drain the cauliflower and remove it onto a plate.

Now let’s make the sauce. Gather the ingredients for making the gravy for Gobi Manchurian.

Step 12

Preheat a wok on high flame. Add 2 tbsp oil to it. Toss in 2 tbsp chopped green chilies (or to taste), ½ tbsp grated ginger, and 2 tbsp minced garlic. Sauté them for a few seconds.

Add ½ cup finely chopped spring onion whites and sauté for few more seconds.

Then add ½ cup chopped capsicum and sauté for a minute.

Season with salt, ½ tsp freshly ground black pepper, and ½ tsp MSG/ajinomoto. Mix.

Now add 1 tsp vinegar and sauces; 1 tbsp light soy sauce, 2 tbsp schezwan sauce, ½ tbsp hoisin sauce, and ½ tbsp black bean sauce. Mix well.

Step 17

Add the cornstarch slurry made by mixing 1 tsp cornstarch with ½ cup water. Bring the sauce to a boil.

Turn off the heat. The sauce should look like this.

    where do you get cauliflower with green stalk ? we have only one with white stalk and it stinks. i tried to find cauliflower with green stalk at many places but couldnt.

      Hi Mansi. It’s okay if you don’t get cauliflower with green stalk. Try looking for the ones which has pale, yellowish florets. It’s also good.

    your gobi manchurian recipe looked so different from the other recipes on the internet that i had to make it just the way you did.. i bought the sauces and yes they were expensive but i thoroughly enjoyed making and eating this dish..
