Fruit salads are an indispensable part of Indian summers. It’s a great time to enjoy the luscious combination of seasonal and perennial fruits. You would find bowlfuls of fruit salad resting in the fridge for everyone in the family and anyone who visits. Every household has a different way of making a fruit salad. Some simply cut different fruits and mix them together. Others like to season theirs with chat masala. There are some folks who like my Mum make a fruit salad dressing.She makes it with orange juice, lemon juice, salt, and chat masala and add cut fruits and boiled chickpeas to it. She says that’s how it was made when decades ago when she was a little kid. That’s a recipe for another day.

As an attempt to make the concept of fruit salad more diverse, I am sharing the recipe that uses evaporated milk. And I am not going to add custard powder to it. In this salad, each fruit stands out individually yet unconflictingly, without one flavor overshadowing the other. The richness of milk complements the tang from the fruits just perfectly.

A combination of seasonal and year-round fruits would give you the best result in terms of nutrients, flavors and taste. The mélange of sweet and sour is what we are looking for. I have used oranges for the tangy vibe. I know, I know, it’s a citrus fruit and some of you are probably wondering how I can add it to the milk. Well, the milk is evaporated, thickened and cooled off completely. It’s perfectly fine adding oranges to the cold milk and we are not going to reheat it anyway. The milk won’t split.

Besides oranges, I have used grapes, apples, bananas, and chikoos/sapodilla. And of course, you may add your favorite fruits. Fruit salads are a fun way of getting your entire family to eat milk and fruit and making them happy at the same time. It’s loaded with minerals and vitamins that keep you energized.

Ingredients
  • Full cream milk – 4 cups
  • Sugar – 5 tbsp or to taste
  • Apple – ¾ cup, finely chopped
  • Grapes – 1 cup, finely chopped
  • Chikoos/Sapodillas – 1 cup, finely chopped
  • Bananas – 2 large, mashed
  • Oranges – 2 medium, peeled
Instructions
  1. First of all, combine milk and sugar. Bring the milk to a boil and then let it simmer on low heat. Stir the milk often and scrape the sides of the pot to incorporate the layer of cream back into the milk. Simmer the milk till only half of it is left.
  2. Let the evaporated milk cool down. Give it an occasional stir while it’s cooling so that the cream doesn’t separate.
  3. Meanwhile, prepare the fruits. Peel and chop the chikoos and apple. Chop the grapes. Peel the orange as well as each slice of orange. Make sure the orange slices break smaller into pieces. Peel and mash the banana with your hand.
  4. Once the milk reaches room temperature, add in the mashed banana. Give it a good stir.
  5. Add the apple, chickoos, oranges and grapes. Mix well.
  6. Pop the fruit salad in the fridge for a couple of hours. Give it a quick stir before serving.
  7. Fruit salad recipe with milk is ready. Serve chilled. Enjoy!

First of all, combine 4 cups of milk and 5 tbsp of sugar. You may adjust sugar according to your taste. Bring the milk to a boil and then let it simmer on low heat.     hey! i had all the fruits at home but no one was eating them so i decided to go for this recipe, and to my surprise, it tastes soooooo delicious, when the fruits have soaked in the milk for 5~6 hours, there is a huge change in the flavors, they taste way more delicious, its something very new to me, very simple yet very rich recipe.
