This Falooda sev recipe (फालूदा सेव रेसिपी) is an easy way to make falooda sev at home using cornstarch. Falooda is a very popular dessert without which the Indian summers are incomplete. It is made by combining different elements such as rose syrup, sabja or basil seeds, falooda sev, sweetened milk, and ice cream.

Falooda sev is also known are falooda noodles and falooda vermicelli. You might find packets of dried falooda sev in supermarkets. They are made with tapioca starch, also known are sago or sabudana. I have been unable to find the real falooda sev since quite some time now, which is why I have been making it at home. There is nothing you can replace the falooda sev with. Some people use spaghetti or regular wheat vermicelli instead but it just does not compare to the real falooda sev. Tapioca starch is not something everyone can find. On the other hand, cornstarch is very easily available and yields excellent results. After all, authenticity matter a lot of this recipe.

The falooda sev made with cornstarch is translucent and shiny. Let me tell you how easy it it to make falooda sev at home. Firstly, you combine the cornstarch with water. Then you add some sugar to make it taste sweet and also some rose water to lend it a very alluring rosy fragrance.

Next, cook this liquid until it turns into a sticky dough. Transfer the dough while it is still hot to the chakli maker, also known as murukku press or sev maker. Finally, the dough is pressed over a bowl of cold water where the noodles fall in and begin to set. The entire bowl is transferred to the freezer and chilled for 15-20 minutes. Once the falooda sev is set properly, it is ready to use.

Now here is a tip that I got from  friend of mine. She recommends soaking the falooda sev in rose syrup after they have set, and until you are ready to use. It will make the falooda sev taste even more delicious. That’s because they absorb the flavours of the rose syrup really well. However, this step is optional. It works when you are making rose falooda. But note that you cannot soak the falooda sev in rose syrup if you are making other varieties of falooda; such as kesar falooda or mango falooda. In that case, rose syrup is not the part of the recipe.

Ingredients
For Makinf Falooda Sev
  • Cornstarch - ½ cup
  • Water - 1 & ¼ cup
  • Sugar - 2 tbsp
  • Rose water - 1 tsp
Other Ingredients
  • Ice cold water - a big bowlful
  • Oil - to grease the chakli maker
Instructions
  1. Grease the chakli maker with some oil. Fit it with the finest sieve that has the smallest holes. Keep the bowlful of ice cold water ready. Let the ice melt completely. Also, make sure you have a pair of oven gloves.
  2. Combine the cornstarch, rose water, sugar, and water in a bowl.
  3. Mix well to form a smooth, lump-free mixture.
  4. Transfer the mixture to non-stick pan or kadhai.
  5. Turn the heat on and cook the liquid on medium to low heat stirring it constantly.
  6. Finally, it will turn into a sticky dough and start coming together to form a dough ball, leaving the sides of the pan/kadhai. It will look glossy. Turn the heat off.
  7. Put on the oven gloves. Instantly transfer the cornstarch dough to the greased chakli maker. Close it with the lid.
  8. Now, hover the chakli maker over the bowl of cold water in circular motion while you press the cornstarch dough through it.
  9. The dough will come out in the form of thin strings or noodles and fall into the cold water.
  10. When you are through, keep the bowl containing the falooda and water in the freezer for 15-20 minutes so that the falooda sev would set properly.
  11. Finally, shift it to the refrigerator until you are ready to use it.
  12. Falooda sev is ready and it stays fresh for about 2 days in the refrigerator. This much falooda sev is enough for making 4 servings of falooda.
  13. You can keep it immesed in water. Or you can drain the falooda noodles and immerse them in rose syrup until you are ready to use them. They absorb the flavor of the rose syrup and taste really good when you add them to the falooda later on. This step is totally optional.

Firstly, gather the ingredients for making falooda sev recipe. You will need 1/2 cup cornstarch, 1 & 1/4 cup water, 2 tbsp sugar, 1 tsp rose water.

You will need to have a chakli maker, which is also known as bhujia maker or murukku maker. Use the sieve that has the second tiniest holes in it. Grease the chakli maker and the sieve with oil. Have a pair of oven gloves at hand.

      It’s so hard indeed! People are using sevaiyaan/vermicelli as a substitute and the falooda ends up tasting like kheer.
