Ingredients
  • Boiled eggs – 4, scrunched
  • Mayonnaise – ¼ cup
  • English mustard – ½ tbsp
  • Honey – ½ tbsp
  • Paprika – 1 tsp
  • Garlic powder – 1 tsp
  • Black pepper – ½ tsp or to taste
  • Salt – to taste
  • Lemon juice – 1 tsp or to taste
  • Spring onion greens – 2 tbsp, finely chopped
  • Spring onion whites – 2 tbsp, finely chopped
  • Coriander leaves – 2 tbsp, finely chopped
  • Bread slices - 8
Instructions
  1. Combine together mayo, lemon juice, honey, English mustard, paprika, garlic powder, salt and black pepper to make the egg salad dressing.
  2. Add the coriander leaves, spring onion whites and greens and mix.
  3. Add the eggs and mix well. Check the seasoning.
  4. Egg salad is ready.
  5. To make sandwiches toast the bread slices and spread butter onto them.
  6. Place some lettuce leaves and spread the egg salad generously onto the lettuce.
  7. Place more lettuce over the egg salad. Pack the sandwich with another slice of buttered bread. Egg mayo sandwich recipe is ready.

      I was so apprehensive. But I tried it anyway and I am hooked onto it. If you love eggs, you will love this salad. The lettuce in the sandwich makes it yummier..
