Lemon Rice Recipe | How to Make South Indian Lemon Rice

Lemon rice is an easy recipe of rice tossed in a fragrant tempering, finished with lemon juice, and garnished with cashews and peanuts. It has a crunch from the fried urad dal and chana dal and a very peculiar tang from the lemon that makes the rice so unique and pleasing to the taste buds.
Ingredients
  • Cooked white rice - 5 cups (I have used aged surti kolam)
  • Oil - 2 tbsp
  • White urad dal (skinned & split black gram) - 1 tbsp
  • Chana dal (split bengal gram) - 1 tbsp
  • Mustard seeds - ¾ tsp
  • Cumin seeds - ½ tsp
  • Asafoetida - ⅛ tsp
  • Whole dried red chilies - 3, cut up into small pieces
  • Curry leaves - 15 leaves
  • Ginger - 1 inch, grated
  • Green chilies - 4, finely chopped
  • Turmeric - ⅛ tsp
  • Lemon juice- 2 tbsp or to taste
  • Coriander leaves - 2 tbsp, finely chopped
  • Peanuts - 3 tbsp
  • Cashews - 3 tbsp
  • Salt - to taste
Instructions
  1. To prepare South Indian lemon rice recipe, start off by heating oil in a skillet. Fry the peanuts until they are golden and nutty. Remove them onto a plate.
  2. Next, toss in the cashews and fry them until golden. Remove them onto a plate too.
  3. In the remaining oil, add the mustard seeds and let them splutter.
  4. Then add the cumin seeds an let them sizzle. Add the asafoetida.
  5. Add in the white urad dal/skinned & split black gram and the chana dal/split Bengal gram. Saute them on low heat until they turn golden.
  6. Toss in the dried red chilies and curry leaves torn with hand. Saute for a few seconds until the curry leaves turn crispy.
  7. Add the green chilies and ginger and saute until fragrant.
  8. Turn the heat off. Add some salt and 1 tbsp lemon juice to season the tempering ingredients. There is salt in the cooked rice already so don't add a lot of it to the tempering.
  9. Add the cooked rice, turmeric, and the remaining tbsp lemon juice. Mix well.
  10. Finish off the lemon rice with coriander leaves. Give it a final mix.
  11. Serve the Andhra style lemon rice and garnish it with fried cashews and peanuts. Enjoy!
