This recipe of aloo matar ki sukhi sabzi (आलू मटर की सूखी सब्ज़ी) is very close to my heart. Come winters and I loved indulging in delicious sabzi made using seasonal vegetables. My Mom used to make it for my lunchbox when I was a school-going kid. I loved it so much that I demanded that I wanted aloo matar in my tiffin as often as possible. I still love this dry aloo matar recipe and it takes me back in time.

The dry aloo matar recipe (ड्राई आलू मटर रेसिपी) has a tomato base, which makes the gravy very tangy. The spices used are very basic; the usual turmeric, red chili, coriander powder. The addition of chicken masala adds an amazing zing to the dry aloo matar recipe. The potatoes and peas are boiled separately. If you are using frozen peas, you don’t need to boil them because they are boiled prior to freezing.

Please note that the Everest Chicken Masala is just a spice blend and hence it is vegetarian. You can use it in vegetable curries without any hesitation.

  • Boiled potatoes - 300 grams, diced
  • Peas - 1 & ½ cups, boiled
  • Oil - 3 tbsp
  • Cumin seeds - ½ tsp
  • Tomatoes - 2 cups, chopped
  • Garlic - 12 medium cloves, finely crushed
  • Ginger - ½ inch piece, finely crushed
  • Green chilies - 2, chopped
  • Salt - to taste
  • Hing/asafetida - ⅛ tsp
  • Turmeric powder - ¼ tsp
  • Red chili powder - 1 tsp or to taste
  • Coriander powder - 1 tsp
  • Jeera powder - ¼ tsp
  • Everest chicken masala - ½ tsp
  • Coriander leaves - 2 tbsp, finely chopped
Instructions
  1. To make dry aloo matar recipe, start off by heating oil. Add in the cumin seeds. Once they sizzle, add the hing/asafetida and let it sizzle too.
  2. Add the ginger and garlic and saute until fragrant.
  3. Add tomatoes and salt. Cook until the tomatoes soften and the oil begins to separate.
  4. Add in all the spices; turmeric powder, red chili powder, coriander powder, jeera powder, and Everest Chicken Masala. Saute for a few seconds.
  5. Add in the peas.
  6. Add the boiled potatoes and green chilies. Give it a mix.
  7. Cover and cook on low heat for 3-4 minutes.
  8. Finally, garnish the dry aloo matar sabzi with coriander leaves. Give it a final mix.
  9. Dry aloo matar recipe is ready. Serve it hot with roti or chapati.

      Hello Smitha. Chicken masala is a vegetarian product. It is just a blend of spices and does not contain chicken. You can surely use it. 😊
