Dahi vada (दही वड़ा), a rich tasting, creamy deliciousness is a North Indian snack that has gained popular in several other parts of India. It’s a dish that looks so lavish but deceptively easy to make at home. Dahi Vada is known as Dahi Bhalla (दही भल्ला) in Punjabi. The food at the Indian weddings is incomplete without dahi vada on the side. A spoonful of chilled, slightly sweet dahi vada is immensely soothing after you have tasted the entire fare of savories. For the uninitiated, the dahi vada recipe consists of fried lentil dumplings or vadas that are soaked in yogurt, i.e., dahi; hence the name. The dumplings are very soft and flavorful.

The platter of dahi vada is garnished with various ingredients depending on one’s choice. It is customary to adorn a dahi vada with coriander leaves, sweet tamarind chutney, roasted cumin powder, chaat masala, and red chili powder. Some people like to add green chutney, pomegranate, and nylon sev to their dahi vada. I prefer to stick to the basics though. Simpler is better when it comes to dahi vada.

Usually, the dahi vada recipe is supposed to be almost instant. However, the white urad dal or the skinned and split black gram lentil is heavier on the tummy, and thus my mum-in-law has been using fermented batter to made dahi vada that is lighter and tastier. This is her recipe and like me, you are going to love it too. The wait of few hours is going to be worth it.

The ideal consistency of the dahi for dahi vada recipe is like that of a milkshake. The vadas absorb the moisture from the dahi and make it thicker. So it’s always a good idea to use dahi that’s not very thick. If you are using Greek yogurt, add water to thin it down. I have used homemade dahi, which has a high water content even though I used full cream milk to make it. So I didn’t need to add any water to it.

Ingredients
For Preparing the Vadas
  • White urad dal/Skinned & split black gram lentils – 1 cup
  • Rice – ¼ cup
  • Chana dal/Split Bengal gram – ¼ cup
  • Salt – to taste
  • Water – to soak the dal and rice
  • Water – a bowlful, to soak the vadas in
  • Oil – for deep-frying the vadas
Other Dahi Vada Ingredients
  • Fresh yogurt – 3 cups, chilled
  • Sugar – 5 tbsp
  • Salt – to taste
  • Sweet tamarind chutney – as needed (recipe here)
  • Chaat masala – to taste
  • Roasted cumin powder – to taste
  • Red chili powder – to taste
  • Coriander leaves – for garnish
Instructions
  1. Soak for 8 hours the white urad dal/skinned & split black gram lentils, chana dal, and rice separately in sufficient water.
  2. Drain them really well. Reserve a few tablespoons of water for grinding.
  3. Grind the white urad dal/skinned & split black gram lentils to a paste. Try not to use more than 2 tbsp of water while grinding the dal. It is fine if the paste is a bit coarse. Take it out in a bowl.
  4. Grind together the chana dal/split Bengal gram and rice to a smooth paste using 1-2 tbsp water. Add it to the ground urad dal.
  5. Mix both the batters really well. Cover and keep the batter in a warm place for the next 5-6 hours until it ferments.
  6. When the resting time of the vada batter is almost over, prepare the yogurt mixture to soak the vadas in. Add sugar and salt to the yogurt. Give it a whisk. If the yogurt is too thick, add water to adjust the consistency.
  7. The batter should have doubled in volume. Give it a mix and add salt to it. Mix well.
  8. Heat the oil in a skillet. Carefully drop dollops of batter with a hand.
  9. Fry them on medium-high heat until the outside layer sets.
  10. Flip them and continue to fry on low heat until they turn golden brown.
  11. Drain the vadas. Try eating a vada without soaking to see if it is cooked through. If not, fry on low heat for a little longer. Add the hot vadas to a bowlful of water to soak for a minute.
  12. Then take a vada and place it in the center of your hand. Squeeze the vada ever so gently to get rid of the excess water without ruining its shape.
  13. Add the vadas to the bowl of whisked yogurt and let them soak for a minute.
  14. Serve the dahi vadas in a plate. Sprinkle some chaat masala, roasted cumin powder, and red chili powder. Drizzle some sweet tamarind chutney on the vadas and garnish with coriander leaves.
  15. Dahi vada is ready. Enjoy!

    i had no idea dahi vada can be made with fermented batter.. i have always hated the smell of unfermented urad dal..thank you for sharing this awesome recipe..going to try it soon..
