Sweet corn pakoda recipe (स्वीट कॉर्न पकोड़ा रेसिपी) is one of the quick and easy sweet corn snacks on here that is much loved by kids and grown-ups alike. My corn pakoda recipe is adapted from the Mexican street corn fritters. The Mexican version has jalepenos and cojita cheese. I have used ingredients that re easily available to us in India. Hence, this corn pakoda recipe has a desi touch. These are also called as makai ke pakoda and sweet corn bhajiya.

Ingredients
  • Boiled sweet corn kernels - 1 cup
  • Boiled sweet corn kernels - ½ cup, coarsely ground
  • Maida / all-purpose flour - ½ cup
  • Cornstarch - ¼ cup
  • Baking soda - a pinch
  • Milk - ½ cup, chilled
  • Salt - to taste
  • Black pepper - ½ tsp or to taste, coarsely ground
  • Green chilies - 3 or to taste, finely chopped
  • Spring onion whites - ¼ cup, finely chopped
  • Spring onion greens - ¼ cup, finely chopped
  • Coriander leaves - 2 tbsp
  • Lemon juice - ½ tbsp
  • Cheese cubes - 4 (100 grams), grated
  • Oil - for deep-frying
Instructions
  1. Combine the boiled sweet corn kernels and coarsely ground sweet corn in a bowl.
  2. Add in the all-purpose flour and cornstarch. Give it a mix.
  3. Toss in the spring onion whites, spring onion greens, coriander leaves, and green chilies.
  4. Add milk and mix. The mixture should come together. It should not be runny.
  5. Season the mixture with salt and black pepper. Be careful while adding salt because the cheese is salty too.
  6. Also add the lemon juice and baking soda. Give it a mix.
  7. Lastly, add in the grated cheese and gently fold it into the corn pakoda mixture.
  8. Heat oil in a pan or kadhai on medium-high heat. To make the corn pakoda, add teaspoonfuls of batter in the hot oil. The pakoda should not be bigger, else they will stay raw on the inside.
  9. The pakoda take a few seconds to set on the underside. Then flip the corn pakoda.
  10. Fry the pakoda further on low flame until they are golden brown and crispy. This takes 2-3 minutes. Flip the pakoda often so that they get a even color.
  11. Remove the sweet corn pakoda onto a plate lined with kitchen towel to soak any excess oil.
  12. Serve the corn pakoda with cilantro mayo. Enjoy!

Combine 1 cup boiled sweet corn kernels and 1/2 cup coarsely ground sweet corn in a bowl. (measure the 1/2 cup sweet corn kernels before grinding them)

Toss in 1/4 cup finely chopped spring onion whites, 1/4 cup finely chopped spring onion greens, 2 tbsp finely chopped coriander leaves, and 3 finely chopped green chilies. Give it a mix.
