For my readers who are not very familiar with the Indian cuisine, chicken tikka is an appetizer recipe. Tikka literally means bite-size bits. The bite-size pieces of chicken and diced veggies are steeped for a few hours in the yogurt marinade infused with Indian spices. They veggies and chicken tikka are arranged on the skewers and cooked over hot coals in the tandoor, which is a traditional oven used in the Indian cuisine.

The chicken tikka pieces come out juicy with a crust of slightly charred marinade. They have an irresistible smoky flavor from the coals. It’s hard to put in words how divine this chicken can taste. You have to try chicken tikka recipe for yourself to experience how something that is made with the most basic ingredients holds such complexity of flavors within itself.

Some folks are always confused between chicken tikka and chicken tikka masala. So let me clarify it for you. Chicken tikka recipe is an appetizer or a starter. You have it straight out of the tandoor with salad and mint-coriander chutney. For the sake of simplicity, many restaurants call it ‘Dry Chicken Tikka’ or ‘Chicken Tikka Tandoori’ on their menus.

On the other hand, chicken tikka masala is a curry. The appetizer chicken tikka is chopped to smaller bits and added to a curry made from onion, tomatoes, cashews, and spices. It is a main dish and had with naan or roti. It tastes equally awesome on the bed of white rice.

So that is that.

A good chicken tikka has not only delicious crust from the marinade charring over the coals but also flavorful core. It is important that the chicken absorbs the seasoning so that it won’t taste bland on the inside. The solution is simple; marinating the chicken twice.

The first marinate is the simple salt, red chili, lemon, ginger, and garlic. The second one is the yogurt marinade with lots of spices in it. Resting the chicken in the second marinade for at least 2-3 hours is highly recommended.

If you don’t have a tandoor at home, you can make chicken tikka recipe in the convection oven. Bake the skewered chicken and veggies in a preheated oven at 180° C for 25 to 35 minutes. Do baste it as I have done. And keep an eye after 20 minutes. The temperature and time vary from oven to oven. It also depends on how tender your chicken is.

Chicken tikka dry is a restaurant-style appetizer that is very popular among the restaurant goers. Juicy bits of chicken drenched in the hot & spicy yogurt marinade are grilled over hot coals in the traditional Indian oven AKA the tandoor.The addition of bell peppers, tomato, and onions gives the tikka a fresh, fruity vibe.

Ingredients
For the First Marinade
  • Boneless chicken thighs – 400 grams, cut into 1-inch pieces
  • Salt – to taste
  • Byadgi red chili powder – 1 tbsp
  • Lemon juice – ½ tbsp
  • Ginger & garlic paste – 1 tbsp, freshly ground
For the Second Marinade
  • Hung curd – ¾ cup
  • Roasted besan/Roasted chickpea flour – 1 tbsp
  • Ajwain – ½ tsp
  • Byadgi red chili powder – 1 tbsp
  • Regular red chili powder (hot variety) – 1 tbsp
  • Turmeric – ¼ tsp
  • Coriander powder – 1 tsp
  • Garam masala – ½ tsp
  • Cumin powder – 1 tsp
  • Ginger & garlic paste – 1 tbsp, freshly ground
  • Salt – to taste
  • Melted butter – ⅓ cup
Other Ingredients
  • Red bell pepper – 1 medium, diced
  • Capsicum – 1 medium, diced
  • Onion – 1 medium, halved & layers separated
  • Tomato – 1 medium, diced
  • Oil – as needed, for basting
Instructions
  1. For the first marinade, combine chicken, salt, byadgi red chili powder, lemon juice, and ginger-garlic paste in a bowl. Mix well.
  2. Cover the bowl and pop the chicken in the refrigerator for 30 minutes.
  3. Now to make the second marinade, combine hung curd, ginger-garlic paste, roasted besan/chickpea flour, ajwain, byadgi red chili powder, regular red chili powder (hot variety), turmeric powder, coriander powder, garam masala, cumin powder, chat masala, salt, and melted butter In another bowl. Whisk well.
  4. Add in the chicken, diced capsicum, red bell peppers, tomato, and onion. Mix well. Let it rest in the fridge for 2-3 hours.
  5. When the tandoor grill is ready, arrange the chicken and vegetables on the skewers in the alternate fashion.
  6. Mix some oil in the leftover marinade. Use it to baste the chicken tikka kebabs.
  7. Place the chicken tikkas on the hot grill. Cover the tandoor and cook for 3-4 minutes.
  8. Open the tandoor. Baste the chicken tikka on all the sides with the leftover marinade mixed with oil.
  9. Cook the chicken tikkas on the other side now. Close the tandoor and let it cook for 3-4 minutes.
  10. Open the tandoor. Turn the tikkas once again and let it cook for one minute. Remove them onto a plate.
  11. Chicken tikka recipe is ready. Serve the chicken tikkas hot with salad and mint-coriander chutney. Enjoy!

Chicken for making chicken tikka needs to be marinated twice. You will 400 grams boneless chicken thighs cut into 1-inch pieces, salt to taste, 1 tbsp byadgi red chili powder, ½ tbsp lemon juice, and 1 tbsp freshly ground ginger & garlic paste.

Step 2

Combine all the ingredients for the first marinate along with the chicken.

For the second marinade, you will need ¾ cup hung curd, 1 tbsp freshly ground ginger-garlic paste, 1 tbsp roasted besan/chickpea flour, ½ tsp ajwain, 1 tbsp byadgi red chili powder, 1 tbsp regular red chili powder (hot variety), ¼ tsp turmeric powder, 1 tsp coriander powder, ½ tsp garam masala, 1 tsp cumin powder, ½ tsp chat masala, salt to taste, and 1/3 cup melted butter.

Step 5

Combine all the ingredients for the second marinade in another bowl.

Add in the chicken, diced vegetables – 1 medium capsicum, 1 medium red bell pepper, 1 medium tomato, and 1 medium onion, layers separated.

Mix well. Let it rest in the fridge for 2-3 hours.

Place the chicken tikkas on the hot grill. Cover the tandoor and cook for 3-4 minutes.

Open the tandoor. Turn the tikkas once again and let it cook for one minute. Remove them onto a plate.
