Pasta is a very healthy option to make quick a meal for your entire family. Even though it’s so easy to make pasta and it takes just a few minutes to put it on the table, there is no compromise in terms of nutrition. Just like sandwiches, it is up to you what to add to a pasta recipe that will make it filling, tasty and nutritious all at once. Simply put, pasta recipes are quite versatile. Recently, I have shared a couple of most popular pasta recipes; the red sauce pasta and the white sauce pasta; both of which are vegetarian recipes. This pasta recipe is something that the non-vegetarians would absolutely love. It’s the chicken pasta recipe cooked in a tomato-based sauce and has wonderful umaminess from the pre-marinated chicken and freshness of basil.

Marinating the Chicken for Chicken Pasta Recipe

I really don’t support the idea of stir-frying the boneless bits of chicken with just salt and pepper. That just doesn’t work with the kind of chicken you get in India. It will take too long too cook and lose it’s juiciness. So first, marinate your chicken for a few hours in the yogurt and a few spices. Ideally, you should grill this chicken using gas tandoor or the grill/broil option of your oven. Since not everyone has the facility of an oven, I have pressure cooked the chicken. If you are baking the chicken, you may use boneless pieces, but from wings and thighs only. Chicken breast often becomes dry and chewy. Since I have pressure cooked the chicken, I have used wings and thighs with bone-in. The gravy gets the flavors and taste from the bones as well, further enhancing the overall taste of the chicken pasta.

So it’s entirely upto you if you want to grill/broil, bake, or pressure cook your chicken. Need less to say, the taste and texture will vary a bit depending on how you cook your chicken, but the pasta will taste stunning anyway. It’s all about convenience in this case, using the cooking method that works for you.

Base of the Chicken Pasta Sauce and Choice of Pasta

This chicken pasta recipe has a very hot and tangy sauce made with tomatoes, basil, garlic, and onion. It also has some fresh vegetables and cheese in it. I have added colorful bell peppers and boiled sweetcorn. You could use the veggies you like and that you feel will taste good in the chicken pasta. Finely chopped mushroom tastes really great though. If you have it, add a quarter of a cup of finely chopped mushrooms.

Ingredients
For Preparing the Pasta
  • Penne Pasta - 1 & ¾ cups (200 grams)
  • Water - 6 cups
  • Salt - ½ tsp
For Preparing the Chicken
  • Chicken - 500 grams
  • Thick yogurt - ¼ cup
  • Red chili flakes - 1 tbsp
  • Byadgi red chili powder - 1 tsp
  • Lemon juice - 1 tsp
  • Garlic - 1 tbsp, finely crushed or ground
  • Salt - to taste
  • Maggi Magic Cube - 1
  • Onion - ½ cup, finely chopped
  • Oil - 2 tbsp
To Make the Pasta Sauce
  • Tomatoes - 400 grams
  • Onion - ¼ cup, finely chopped
  • Garlic - 1 tbsp, minced
  • Mixed bell peppers - ½ cup, chopped
  • Boiled sweet corn - ½ cup
  • Ready-made tomato puree - ¼ cup
  • Ketchup - 2 tbsp
  • Sugar - 2 tsp
  • Salt - to taste
  • Red chili flakes - 1 tbsp
  • Pasta seasoning - ½ tbsp
  • Olive oil - 2 tbsp
  • Fresh basil - 10-12 leaves
  • Cheese slices - 2 (Or parmesan cheese)
Instructions
  1. First of all, marinade the chicken. Combine in a bowl the yogurt, red chili flakes, red chili powder, salt, lemon juice, crushed/ground garlic, and Maggi Magic Cube. Mix well.
  2. Add in the chicken and mix well. Cover the bowl and pop the chicken in the refrigerator for 4-5 hours.
  3. To cook the chicken, heat the oil in a pressure cooker and toss in the onions. Saute until it turns pink.
  4. Add in the marinated chicken and saute till the chicken turns white.
  5. Pressure cook the chicken without any water for 2-3 whistles or until it's cooked through. The chicken will release it's own moisture and get cooked in it.
  6. Let the pressure on it's own. Let the chicken cool a bit if you are using bone-in chicken. Then remove the pieces of chicken in a bowl and remove its bones. Use only the meat an the gravy.
  7. Alternatively, you can use boneless chicken and grill/broil it on the top rack of your oven until it is cooked through. Reserve the cooked marinade in the tray to add to the pasta.
  8. Now let's prepare the pasta. Bring the water to a boil in a large pot. Add salt to it.
  9. Toss in the pasta and cover the pot. Let the pasta boil for about 8-10 minutes or until al dente. Do give it an occasional stir.
  10. In the meanwhile prepare the sauce. Boil the tomatoes until the peel cracks.
  11. Drain the tomatoes. Peel and chop them. Transfer them to a blender.
  12. Pulse the tomatoes to get a chunky puree.
  13. Heat the olive oil in a skillet or a pan. Add in the chopped onions.
  14. When the onions turn pink, add the garlic. Saute it for a minute so that it loses its raw smell.
  15. Add in the mixed bell peppers and boiled sweet corn. Saute for a minute.
  16. Season the veggies with pasta seasoning and chili flakes.
  17. Then add the ready-made tomato puree and chunky pureed tomatoes that we just made. Mix well.
  18. Season the pasta sauce with salt and sugar. Let the sauce simmer until it thickens and becomes flavorful.
  19. Finally, add the cheese slices, ketchup, and torn basil leaves.
  20. Then add in the entire gravy along with the oil that it released. Add the chicken meat too. Mix well.
  21. The pasta will be done by now. Strain it and add it to the chicken pasta sauce. Give it a mix.
  22. Chicken pasta recipe is ready. Serve hot. Garnish with some more basil leaves. Enjoy!

Mix well. Cover the bowl and pop the chicken in the refrigerator for 4-5 hours.

To cook the chicken, heat 2 tbsp oil in a pressure cooker and toss in 1/2 cup finely chopped onions. Saute until it turns pink.

Pressure cook the chicken without any water for 2-3 whistles or until it’s cooked through. The chicken will release it’s own moisture and get cooked in it.

Let the pressure on it’s own. Let the chicken cool a bit if you are using bone-in chicken. Then remove the pieces of chicken in a bowl and remove its bones. Use only the meat an the gravy. Alternatively, you can use boneless chicken and grill/broil it on the top rack of your oven until it is cooked through. Reserve the cooked marinade in the tray to add to the pasta.

Now let’s prepare the pasta.

Bring 6 cups water to a boil in a large pot. Add salt to it.

Toss in 1 & 3/4 penne pasta (200 grams) and cover the pot. Let the pasta boil for about 8-10 minutes or until al dente. Do give it an occasional stir.

In the meanwhile prepare the sauce. These are the ingredients for the chicken pasta sauce.

Boil 400 grams of tomatoes until their peel cracks.

Drain the tomatoes. Peel and chop them. Transfer them to a blender.

Pulse the tomatoes to get a chunky puree.

Heat 2 tbsp olive oil in a skillet or a pan. Add in 1/4 cup finely chopped onions.

Season the veggies with 1/2 tbsp pasta seasoning and 1 tbsp chili flakes.

Then add 1/4 cup ready-made tomato puree and chunky pureed tomatoes that we just made. Mix well.

Season the pasta sauce with salt to taste and 2 tsp sugar. Let the sauce simmer until it thickens and becomes flavorful.

Finally, add two cheese slices, 2 tbsp ketchup, and 10-12 torn basil leaves.
