If you have been following the recipes here for a while, you already know what a big hit the Indo-Chinese food is at my place. It makes me immensely happy when we have company and they lovingly demand that I cook something nice for them or something that they like. So recently, one of my friends who joined us for lunch has told me about her hankering for some good chicken lollipop (चिकन लॉलीपॉप). We had an Indo-Chinese spread and among the starters was her favorite Chicken Lollipop.

What is a Chicken Lollipop?

Chicken lollipops are made by frenching the chicken wings or drumsticks. Here I have used chicken wing lollipops. The meat is pushed towards one end of the bone of the wing so you have a bone to hold onto the knob of meat. The shape of frenched chicken wings resembles that of a lollipop, hence the name.

Taste & Texture of the Chicken Lollipops

Lollipop chicken has a crispy texture on the outside. Marinating the chicken lollipops for an hour helps tenderize them. It’s the soy sauce and MSG that do the magic. The flavors seep into the chicken meat. The end result is the juiciest, and the most succulent chicken lollipops enveloped within the crunchy outside.

Taste-wise, chicken lollipop recipe (चिकन लॉलीपॉप रेसिपी) is meant to be hot; moderately, if not fiery. It gets its taste and red color from the red chili paste. Some people like to add artificial color to the batter to make it appear extra-bright. However, I try to keep the recipes as natural as possible, which is why I have not added any food color to the chicken lollipop batter.

Dipping Sauce for Chicken Lollipops

Chicken lollipops are served with schezwan sauce on the side. I have tried other dipping sauces. However, schezwan sauce turns out the best choice for a chicken lollipop dip. Here is the recipe for homemade schezwan sauce with step by step pictures.

Chicken Lollipop - A very popular Indo-Chinese appetizer/starter recipe that has a characteristic color and taste from the red chilies. The crunchy coat envelops the juicy chicken; that's just how perfect fried chicken should be. The schezwan dipping sauce on the side only makes it fierier and more delicious.

Ingredients
For Marinating the Chicken Lollipops
  • Chicken lollipops – 500 grams (12-14 pieces)
  • Ginger – ½ tbsp, finely crushed
  • Garlic - ½ tbsp, finely crushed
  • Dark soy sauce – ½ tbsp
  • Ground black pepper – ¼ tsp
  • MSG/Ajinomoto – ½ tsp
  • Salt – ¼ tsp or to taste
For the Chicken Lollipop Batter
  • Maida/All-purpose flour – ½ cup
  • Cornstarch – ½ cup
  • Water – ⅓ cup
  • Salt – to taste
  • Ginger – ½ tbsp, finely crushed
  • Ground black pepper – ½ tsp
  • Garlic – ½ tbsp, finely crushed
  • Red chili paste – 2 tbsp or to taste
  • Oil – 1 tbsp
Other Ingredients
  • Oil – for deep-frying the chicken lollipops
  • Spring onion greens – for garnish
Instructions
  1. To make fried chicken lollipops, start by marinating the chicken. In a bowl, combine chicken lollipops, ginger, garlic, salt, ground black pepper, MSG/Ajinomoto, and dark soy sauce.
  2. Mix well. Cover the bowl and refrigerate the marinated chicken lollipop for an hour.
  3. To prepare the batter for the chicken lollipops, combine maida/all-purpose flour, cornstarch, salt, ground black pepper, oil, ginger, garlic, red chili paste.
  4. Add water and whisk well to form a lump-free batter. The batter should have a flowing consistency yet form a nice layer on the chicken.
  5. Hold the chicken lollipop at the bone and dip the knob of the meat into the batter.
  6. Let the excess batter drip.
  7. Drop the chicken lollipops in the hot oil at 180°C. Once the batter sets, turn the heat to low and continue to fry the lollipops until they turn golden and crispy.
  8. I needed about 4 minutes to get perfectly fried chicken lollipops that were cooked through and juicy on the inside. The frying time depends on the amount of meat on the lollipops.
  9. Remove the chicken lollipops onto a plate lined with paper towel.
  10. Wrap the bones of the chicken lollipops with aluminum foil. Arrange the chicken lollipops onto a serving plate. Garnish with spring onion greens. Serve hot with schezwan sauce. Enjoy!

Step 1

Combine everything in a bowl.

Add 1/3 cup water and whisk well to form a lump-free batter. The batter should have a flowing consistency yet form a nice layer on the chicken.

Dip the knob of the meat into the batter.

    nice recipe..chicken lolipop luks yum. you didnt add food color n still your lollipps turned red in color. how is that possible?

      Hello Chintan. Thank you. To answer your question, I have added red chili paste to the batter in which the chicken lollipop is dipped before deep-frying. The red chili paste gives the chicken the bright red color.
