Flatbreads are an integral part of the Indian cuisine and we have a very good assortment of them. A flatbread could be either leavened or unleavened. Naan (नान) or naan bread (नान ब्रेड) is the leavened variety. Also known as naan roti (नान रोटी), it is extremely popular among the restaurant-goers.

Tandoori naan is what you get at the restaurants. The naan is roasted in the tandoor or the clay oven that is fired with wood coals, which also gives it a smokey flavor. Naan is usually made with maida or the all-purpose flour. The most common leavening agent is the yeast. However, you can make naan recipe without yeast as well. What I am sharing with you today is the yeast-free naan recipe. I have made the naan dough with baking soda instead and the result is soft, well-leavened naan that melts in mouth.

This naan recipe is made without oven or tandoor. It is nor possible neither feasible for every household to have a tandoor. The same goes for the oven too. Today’s naan recipe would be made using the stove top method. You will need a good iron tawa/griddle and you can roast the naan on gas. Apart from the resting time of the naan dough, this is a very quick and easy naan recipe, I promise.

Naan and curry are a good choice for when you want to treat yourself to some yummy food. I often make naan with chicken curry, dal tadkaand matar paneer curry and the combos taste fabulous.

This is very important. The naan dough should be neither too dry nor too sticky and gooey. I have used whole milk that has 6% fat content, meaning the milk is thick. The curd or yogurt has been lightly strained to get rid of the excess water. If your yogurt is runny, it will affect the consistency of the dough. In that case, please adjust the amount of milk accordingly. Now let’s see how to make the Indian naan recipe with yogurt on stove top.

Naan Bread or Naan Roti is a slightly leavened flatbread that is popular among the Indian food lovers. Naan is soft, melt-in-mouth, and buttery and goes well with several Punjabi curries.

Ingredients
Makes 5 Naans
  • Maida / All-purpose flour - 2 cups
  • Salt - ½ tsp
  • Powdered sugar - ½ tbsp
  • Baking soda - ½ tsp
  • Oil - 1 tbsp
  • Curd - ¼ cup, lightly strained
  • Warm milk - ½ cup
Other Ingredients
  • Oil - for greasing
  • Maida/All-purpose flour - for dusting
  • Sesame seeds
  • Chopped coriander leaves
  • Butter - for basting the naan
  • Water
Instructions
  1. In a bowl, combine all the dry ingredients; maida/all-purpose, baking soda, salt, and powdered sugar. Give it a mix.
  2. Next, add in the yogurt and oil. Mix well. The flour should look flaky.
  3. Add milk and knead the dough. It will be a little bit sticky. It shouldn't be too soft or too dry.
  4. Lightly grease the kitchen counter. Take the dough out on the counter and knead it like you would knead pizza dough or bread dough. Push it forward with the heal of your hand.
  5. Pull it back using your fingers. Rotate the dough and continue to knead it for 4-5 minutes until it comes together and form a smooth ball.
  6. Place the naan dough in a greased bowl. Apply some oil on the top of the dough ball. Cover the bowl with a plate/lid or cling wrap.
  7. Place the bowl in a warm spot for 3-4 hours until it rises. It would rise but not exactly double in volume.
  8. Divide the dough into 5 portions. Keep a tawa on the gas and heat it.
  9. Take a portion of the naan dough and dust it in the maida/all-purpose flour. Roll it out into an oval.
  10. Now to elongated it further, hold one of the ends gently with your finger tips and pull the other end of the oval. This will also elongate the gluten strands in the dough and make it more flexible.
  11. Now sprinkle some sesame seeds and chopped coriander leaves over the naan and roll it once.
  12. Carefully lift the naan and flip it. Apply some water and pick the naan again and place it on the hot tawa, wet side down. This will make the naan stick to the tawa.
  13. Let the naan cook over low heat for 40 seconds. You will see some bubbles forming on top.
  14. Now pick the tawa and turn it upside down. Turn up the heat and cook the top of the naan over direct heat. Keep some distance between the naan and the fire. Move the tawa over the fire so that the entire naan gets uniformly cooked.
  15. Scrap the naan roti off the tawa with a metal spatula.
  16. Place it on the wire rack and brush it with butter.
  17. Tawa naan recipe is ready. Serve hot with your favorite curry. Enjoy.

You will need chopped coriander leaves and some sesame seeds for garnish, and some ghee/clarified butter for basting the naan.

Take a portion of the naan dough and dust it in the maida/all-purpose flour.

Roll it out into an oval.
