Stuffed bread rolls (स्टफ्ड ब्रेड रोल्स) are one of the highly popular snacks made in Indian homes. I remember enjoying hot, delicious bread rolls as a kid for brunch during the weekends. It was a ritual, to wake up a little later than usual and have something different from the regular meals on weekends. Sandwiches, idli-dosa, bread rolls, samosa-sambar, such was the menu for the holiday mornings. Usually, the Indian bread roll recipe is stuffed with potatoes. The recipe of the stuffing varies though. The bread roll recipe (ब्रेड रोल रेसिपी) that I am sharing with you today is my Mom’s. The savoury potato stuffing is very quick and easy to make. Shaping bread rolls is not that hard for the first-timers. Follow the instructions here on to the letter, and you will have perfectly shaped bread rolls.

Potato bread rolls are a hot favorite among the both kids and grown ups. Bread rolls taste the best when served hot with ketchup. The bread is crispy on the outside, and the warm potato filling is melts in your mouth. Each bite bring so much comfort. It’s a perfect snack for winters as well. Here are a couple of tips for perfectly-shaped bread rolls.

  • Use fresh bread
  • Cut the crust off
  • Do not dip the bread slices in the water for more than 2-3 seconds
  • Squeeze the bread slices very gently to get rid of the excess water
  • The corners of the bread might break when you shape the bread rolls. Just bring them together anyway and shape the entire thing with your palm to get smooth looking roll
  • Do not over stuff the bread roll
  • Use minimal oil to make the stuffing

Ingredients
For the Potato Stuffing
  • Potatoes - 4 medium (500 g), mashed
  • Oil - 1 tbsp
  • Mustard seeds - ¾ tsp
  • Asafetida - a pinch
  • Garlic - 8 cloves
  • Ginger - ½-inch
  • Green chilies - 3 or to taste, finely chopped
  • Salt - to taste
  • Turmeric - ¼ tsp
  • Coriander powder - ½ tsp
  • Garam masala - ¼ tsp
  • Roasted cumin powder/Jeera powder - ½ tsp
  • Curry leaves - 7 to 8, chopped
  • Lemon juice - 1 tsp or to taste
  • Coriander leaves - 2 tbsp, finely chopped
Other Ingredients
  • Bread slices - 10 to 12
  • Water - 1 cup or as needed
  • Red chili powder (byadgi) - ½ tsp
  • Lemon juice - ½ tbsp
  • Oil - for deep-frying the bread rolls
Instructions
  1. Heat 1 tbsp oil in a skillet. Add mustard seeds and let them splutter. Add the asafetida and let it sizzle.
  2. Next, add the green chilies, ginger, and curry leaves. Saute for a few seconds until fragrant.
  3. Add the roasted cumin powder/Jeera powder, coriander powder, and turmeric. Give it a mix and saute for a few seconds.
  4. Add the mashed boiled potatoes and salt.
  5. Cook the potatoes until they get heated through.
  6. Add the garam masala and coriander leaves.
  7. Give it a final mix. Potato stuffing for bread rolls is ready. Let the stuffing cool. Divide it into 10-11 parts.
  8. In a wide dish, take some water. Season it with red chili powder (byadgi) and lemon juice to it and give it a mix.
  9. Take the bread slice with the crust cut off. Dip the bread in the seasoned water for 1-2 seconds. It should be moistened from both sides. Gently squeeze the bread slice to get rid of the excess water.
  10. Place the bread on a plate. Shape a portion of potato masala into an oval and place it on the bread.
  11. Gently bring the edges of the bread together and try to shape it around the potato to form a roll. Cup it between your palms to smoothen the roll. Make the remaining rolls in the same way.
  12. Heat sufficient oil in the skillet at 180 degrees C. Drop in 2-3 rolls depending on the size of the skillet and the amount of oil in it.
  13. Flip the bread roll when the underside sets and looks golden.
  14. Flip again when the other side is golden too. Fry the bread roll until it's golden brown and crispy.
  15. Remove the bread rolls onto a plate lined with a paper towel.
  16. Serve the potato stuffed bread rolls hot with ketchup. Enjoy!

Add the 1/2 tsp roasted cumin powder/Jeera powder, 1/2 tsp coriander powder, and 1/4 tsp turmeric. Give it a mix and saute for a few seconds.

Add the 4 medium (500 grams) mashed and boiled potatoes. Season it with some salt.

Cook the potatoes until they get heated through. Add the 1/4 tsp garam masala and 2 tbsp finely chopped coriander leaves.

Give it a final mix. Potato stuffing for bread rolls is ready. Let the stuffing cool. Divide it into 10-11 parts.
