Who doesn’t love fried rice? I don’t know a single person who would say no to the delightful Indo-Chinese rice dish. Well except for my little niece because of all the vegetables that go into it. But apart from her, everyone else loves it. It is one of the items we always order at the little Chinese restaurant that we frequent at least once a month. The notion of replicating restaurant-style recipes at home always gets me super-excited and this chicken fried rice recipe (चिकन फ्राइड राइस रेसिपी) has always been a big hit in my family. Last week I made a big batch of chicken fried rice brimming with the umami goodness to satiate my hankering for a good bowlful.

Don’t let the Restaurant-Style Fad Takeover your Judgment

Like I said, I like to prepare restaurant-style food at home. But to what extent would you go to replicate it? Not all restaurant-style food is perfect. In India, most restaurants use a very specific variety of rice called ‘Ghoti rice’ for their Indo-Chinese fare. It’s long as well as thick. When you cook it, each grain is separate but it has a chalky texture, which is quite off-putting.

So you might ask what kind of rice is right for making fried rice. Aged rice turns out really nice when cooked correctly. The grains stay separated too. You might be tempted to use basmati rice but that’s not a good choice either. I highly recommend the surti kolam variety for making fried rice. They have a light fragrance, great taste, a good texture, and they absorb the flavours well. To avoid breaking the grains of rice, toss them using a flat mixing spoon around the corners of the wok instead of poking it randomly.

Chicken Fried Rice with Egg and Vegetables

Adding protein to the fried rice to make it a meal is always preferable. That way, you can enjoy the fried rice as it is. You don’t need gravy that is loaded with cornstarch on the side. The chicken fried rice recipe is incomplete without eggs. You will find tons of recipes on the internet that would tell you to scramble the eggs alongside the vegetables. I can tell you from my experience that your fried rice will have a very unpleasant eggy smell. Making an omelette by frying the beaten eggs in some oil will give you the best taste.

The same goes for chicken. In India, the chicken takes very long to cook and stir-frying it in a wok just won’t do. Coating the chicken with a very thin batter and deep-frying it yields the best results. Brining the chicken is optional but highly recommended. It makes the chicken very succulent.

No-MSG Chicken Fried Rice Recipe

You would be glad to know that this chicken fried rice recipe is MSG-free. The umaminess comes from soy sauce and black bean garlic sauce that have the naturally-occurring glutamic acid in them. The choice of brand can make or break a recipe. Always use a good brand of sauces and vinegars for Indo-Chinese cuisine. My favorite brand is Lee Kum Kee. Do try their products if you haven’t already. They are easily available in supermarkets in the metros. I get my stash online from Amazon India.

Ingredients
For Brining the Chicken
  • Chicken breast – 250 grams, cut into strips
  • Salt – ½ tsp
  • Sugar - ½ tsp
  • Vinegar – ¼ tsp
  • Water – 1 cup
For the Batter
  • All-purpose flour/Maida - ¼ cup
  • Cornstarch – 2 tbsp
  • Water – ⅓ cup
  • Baking powder – a pinch
  • Salt – just enough to season the batter
  • Black pepper – ¼ tsp
  • Ginger – 1 tsp, finely crushed
  • Garlic – 1 tsp, finely crushed
  • Oil – 1 tsp + more for deep-frying
For the Fried Rice
  • Onion – 1 medium, finely chopped
  • Ginger – ½ tbsp, finely crushed
  • Garlic – 1 tbsp, finely chopped
  • Green chilies – 4, chopped
  • Cooked Rice – 4 cups, preferably day-old
  • Beaten eggs – 2, seasoned with a pinch of salt
  • Assorted vegetables – 2 cups, finely chopped (French beans, English carrot, cabbage, capsicum)
  • Light soy sauce – 2 tbsp
  • Rice vinegar – 1 tsp
  • Lee Kum Kee’s Black bean garlic sauce – ½ tsp or as per your preference
  • Salt – to taste
  • Black pepper- ½ tsp
  • Spring onion greens – ¼ cup
  • Oil – 3 tbsp
Instructions
  1. To make the brine, combine salt, sugar, vinegar, and 1 cup water in a bowl. Stir until the sugar dissolves.
  2. Add the chicken to the brine. Cover and refrigerate for 2 hours.
  3. Drain the chicken and discard the brine. Heat the oil in the skillet till it reaches 180°C.
  4. Make the batter by combining all-purpose flour, cornstarch, salt, black pepper, baking powder, crushed ginger & garlic, oil, and water.
  5. The batter should be thin, just enough to form a thin coat over the chicken. Add the drained chicken to the batter or dip each piece of chicken individually into the batter and fry it.
  6. Carefully drop the batter-coated chicken in the hot oil. Once the batter sets, turn the heat to medium-high. Continue to fry it until golden and cooked through. It takes about 3 minutes per batch.
  7. Remove the fried chicken onto a plate lined with paper towels.
  8. Chop the fried chicken strips into bite-size pieces.
  9. Now let’s make the fried rice. Preheat a wok at high flame. Add 2 tbsp of oil in a wok and swirl it around. Add in the beaten eggs and swirl it around to make an omelette.
  10. Flip and cook until the egg sets. Remove the omelette onto a plate and set aside.
  11. Add the remaining 1 tbsp oil. Toss in the onions and sauté until pink.
  12. Add ginger and garlic. Sauté till it gives out a nice fragrance.
  13. Add the veggies and green chilies. The veggies should turn tender yet retain their crunch. Do not overcook.
  14. Season the veggies with salt and pepper. Also add the rice vinegar, light soy sauce, and black bean garlic sauce. Toss well.
  15. Add the diced fried chicken. Toss.
  16. Finally, add the cooked rice and omelette. Break the omelette into bite-size as toss the rice.
  17. Add the spring onions and give it a final toss. Chicken fried rice is ready. Serve hot. Enjoy!

Step 1

Step 2

Step 6

Combine the all-purpose flour, cornstarch, salt, black pepper, baking powder, ginger, garlic, and oil.

Add water to make a thin batter; it should form a thin coat over the chicken. Add the drained chicken to the batter or dip each piece of chicken individually into the batter and fry it.

Carefully drop the batter-coated chicken in the hot oil at 180°C. Once the batter sets, turn the heat to medium-high. Continue to fry it until golden and cooked through. It takes about 3 minutes per batch.

Step 12

Now let’s make the fried rice. Preheat a wok at high flame. Add 2 tbsp of oil in a wok and swirl it around. Add in 2 beaten eggs seasoned with a pinch of salt and swirl it around to make an omelette.

Flip and cook until the egg sets. Remove the omelette onto a plate and set aside.

      Thanks Shivangi. The street side Chinese food stalls use chopped fried chicken. Their rice doesn’t taste good. Neither is it healthy. But I loved the idea of adding batter-fried chicken. That’s how I got the idea. 🙂
