Balushahi or badusha is a very popular Diwali sweet. What makes it so special is the skill that goes into making the perfect balushahi. The ingredients of balushahi recipe are very simple. You might already have them all in your kitchen. Balushahi is supposed to be crispy on the outside with layers of flakiness on the inside. For that, you need to make the balushahi dough with perfection.

The dough is divided into portions and deep-fried. The fried balushahi is then immersed in the sugar syrup for a few minutes. The sugar syrup has one-string consistency. It seeps into the hot balushahi right through it. Upon being rested, the layer of sugar syrup crystallizes on the outside of balushahi to give it a partially glossy appearance.

Making balushahi is a bit tricky, no two ways about it. But with a little practice, you will be able to make balushahi that is as good as that of the halwai. I have included the step by step pictures as usual to help you learn the technique with ease.

The all purpose flour is combined with plenty of ghee, some ice-cold water, baking powder, and a pinch or two of salt. You don’t have to actually knead the dough. Just mix to bring every thing together into a dough ball. Kneading or smoothening the dough will kill the layers and flakiness.

So handle the dough with very light hands, while preparing it, layering it, and shaping it into balushahi.

Frying the balushahi right is very crucial. The oil (or ghee) temperature should be optimum. Too high and the balushahi will be raw on the inside. Too low, they will absorb a lot of oil.

I used a thermometer and found that 130 degrees Celsius is a good temperature to fry the balushahi. I took me about 15-18 minutes of frying to get golden-brown balushahi. Use sunflower oil or pure ghee to fry the balushahi.

Ingredients
For making the balushahi
  • Maida/All purpose flour - 2 cups
  • Ghee/Clarified butter - ⅓ cup
  • Cold water - ⅓ cup
  • Baking powder - ½ tsp
  • Salt - ½ tsp
For making the sugar syrup
  • Sugar - 1 & ½ cups
  • Water - 1 cup
  • Green cardamoms - 5
  • Rose water - 1 tsp
  • Kesar/saffron - a few strands
For deep-frying
  • Ghee or oil
Instructions
  1. To make balushahi recipe, first of all, make the sugar syrup. Combine the water, sugar, cardamoms, and saffron in a pot.
  2. Bring it to a boil.
  3. Let the sugar syrup simmer for 7-8 minutes or until you achieve the 1-string consistency.
  4. Add in the rose water. Stir. Keep aside.
  5. Combine maida/all-purpose flour, baking powder, salt in a mixing bowl. Mix well.
  6. Add in the ghee/clarified butter and cold water.
  7. Mix everything well with your fingers, trying to bring it together to form a dough.
  8. Cover the bowl and let the dough rest for about 15 minutes.
  9. Now place the balushahi dough on the bench-top. Flatten it gently with your hand into a sheet as shown in the pictures.
  10. Cut the sheet into halves.
  11. Place one half over the other. Gently press and spread the sheets with your hand. Make sure the two sheets don't merge together.
  12. Cut the spread out, layered sheets into halves.
  13. Place the two halves one over the other. Spread them gently.
  14. Repeat the process 8-9 times.
  15. Cut the slab into 3 long strips. You will see the layers of dough held together.
  16. Gently roll each strip to make it smooth. Do not elongate. Just roll and make it smooth.
  17. Cut the strips to get 15-16 portions.
  18. Take a portion and roll it to form a ball. There would be cracks and the ball won't be smooth or perfect, which is how it is supposed to be.
  19. Gently flatten the ball a bit.
  20. Poke a hole in it by gently pressing it with your thumb or finger. Do this with all the portions.
  21. Heat ghee or oil in a wide kadhai at about 130 degrees Celsius.
  22. Drop in as many balushahis as you can without crowding the kadhai too much. Also, don't fry just a few balushahis at a time. I fried half the balushahi in one batch.
  23. After a few seconds, they will float.
  24. Fry them at a constant temperature for about 15 minutes or until they turn golden brown and crispy on the outside.
  25. Remove the balushahi and place them on the plate lined with a kitchen towel for a few seconds to get rid of the excess oil.
  26. Immediately put them in the warm sugar syrup. Make sure the syrup is warm or slightly hot, but not room temperature. Let them soak the syrup for the next 10 minutes. Fry the rest of the balushahi and add them to the warm syrup.
  27. Remove the balushahi onto a cooking rack to let the excess sugar syrup drip. The syrup on the balushahi will crystallize after 2-3 hours and give it a partially glossy appearance and crunchy texture.
  28. Balushahi is ready. Enjoy it with your family and friends.
