The bitter gourd pairs really well with the sweet tomato chutney. Surprisingly, this tomato chutney recipe tastes great with dosa too. The subtle sourness of the dosa complements the heat of the tomato chutney really well.

  • Tomatoes - 5 medium/500 grams
  • Onions - 1 large, finely chopped
  • Garlic - 10 medium sized cloves, chopped
  • Green chilies - 2 or to taste, finely chopped
  • Groundnut oil - 2 tbsp
  • Cumin seeds - 1 tsp
  • Mustard seeds - 1 tsp
  • Asafetida/Hing - ⅓ tsp
  • Turmeric - ½ tsp
  • Kutilal or byadgi red chili - 1 tbsp or to taste
  • Salt - to taste
  • Jaggery/gur - 2 tbsp or to taste
  • Coriander leaves - a handful, finely chopped
Instructions
  1. The tomato chutney preparation is very simple. First of all, roast the tomatoes on the gas stove until the skin is charred.
  2. Let the tomatoes cool. Then peel them and chop them.
  3. Heat the groundnut oil. Add in the mustard seeds and let them splutter. Then add the cumin seeds and let them splutter. Add the asafetida/hing.
  4. Toss in the garlic and fry it on medium heat until golden and fragrant.
  5. Next, add in the green chilies and saute for a few seconds.
  6. Add the onions and saute until golden.
  7. Add the tomatoes along with all its juices. Season with salt, kutilal/byadgi red chili, and turmeric. Mix.
  8. Add the jaggery. Mix well. Cover and cook until the tomatoes soften and the color of the chutney deepens. The oil will separate too.
  9. Finally, add the coriander leaves and give it a final mix.
  10. Sweet and spicy tomato chutney is ready. Serve it hot with chapathi or paratha. Enjoy!
