French fries need no introduction because they are popular around the world, just like the Beatles. It’s a hot favorite in my family and I always have a stash of frozen fries in my freezer, a part of which is reserved for contingent situations AKA the arrival of unexpected guests. I love to present an entire snack platter so that the guests can have what they like. An ideal snack platter should have something for both adults and the kids. In addition to the fries and ketchup, potato wedges with cilantro mayo dip and cheese crackers form a significant part of my snack platter ideas.

These are basically the McDonald’s India style French fries, only fresher and free of any preservatives. To take things up a notch, I also made the PiriPiri Spice Mix that’s available along with the fries at McDonald’s India when you ask for Shake Shake fries. PiriPiri spice mix is a blend of masalas that are omnipresent in an Indian kitchen. Oregano is the herb that I prefer the most because its fragrance and earthiness compliment the heat of the spices like nothing else.

Unlike the commercially produced piripiri spice mix, the homemade one doesn’t contain any citric acid. Citric acid does lend a sharp tang to the spice mix but it feels way too styptic in the mouth and its aftertaste is not quite desirable. So, I have omitted citric acid in this recipe because it makes the spice mix taste so artificial. But if you like it, you may add a pinch or two.

Choosing the Potatoes for Indian French Fries Recipe

The key to making great French fries is choosing the right kind of potatoes. In India, we get the newly harvested potatoes. They are low in starch and hence do not turn dark upon frying. Only the fries made with new potatoes would turn golden and crispy.

How to Make French Fries Crispy?

The major issue that most home cooks face when they make French fries is the lack of crispiness. Their fries often turn out as limp and soggy. There is a secret to achieving perfectly crispy fries with soft and light insides – Double frying! When you fry the fries once, it cooks the potato completely. Second frying helps get rid of the moisture and making the fries crisp on the outside. Make the Fries and PiriPiri Spice Mix Ahead of Time

Make the fries in advance and store them in the freezer. They stay good for at least 3 weeks when packed properly. Fry them without thawing; straight from the freezer to the fryer. Serve them hot with a generous sprinkle of the PiriPiri spice mix, which you can prepare and store in an airtight jar for several weeks.

Masala fries is the hot and zesty version of the quintessential French fries that are tossed in piquant PiriPiri spice mix.This recipe has a close resemblance to the Shake Shake fries available at the McDonald’s, both taste¬-wise and texture-wise.

Ingredients
For the Fries
  • Potatoes –8, large (new potatoes with a scaly peel)
  • Water – to soak and parboil the fries
  • Salt – 2 tsp
  • Oil – for deep-frying
For the PiriPiriSpice Mix
  • Oregano – 1 tbsp
  • Garlic powder – ½ tbsp
  • Powdered sugar – ½ tsp
  • Black salt - ½ tsp
  • Freshly ground green cardamom – ¼ tsp
  • Ground cinnamon – ¼ tsp
  • Salt – ½ tsp or to taste
  • Chili flakes – 1 tsp
  • Paprika – 2 tsp
  • Red chili powder / Cayenne – 1 tsp
  • Dried ginger powder/Saunth – ¼ tsp
Instructions
  1. Peel the potatoes. Cut them like French fries.Put them in a bowl of water as you go so that they won’t turn dark.
  2. Keep a potful of water on the stove and bring it to a boil. Add salt to it. Drain the fries to get rid of the excess starch and carefully put them in the pot of boiling water. Let them boil for 2 minutes or until they are partially cooked.
  3. Drain the fries and spread them out on paper towels to cool.
  4. Once cooled, place the fries in zip-lock bags. Get rid of as much air as possible and pack the fries as they lay spread in the flattened zip-lock bags.Pop them in the freezer for 3-4 hours or until they harden.
  5. In the meanwhile, combine all the ingredients of the piripirispice mix in a bowl. Mix them well and set the masala aside for later use.
  6. When you are ready to fry the fries, heat canola or sunflower oil in a deep-fryer or a skillet to 190 degrees C or 375 degrees F.Use a thermometer to determine the temperature. Carefully drop the frozen fries into the hot oil. Do not overcrowd the skillet. The temperature of the oil would drop slightly. Continue frying the fries on high heat.
  7. When the fries just begin to change color and the oil has become hot again, turn the heat to medium and fry the fries till they turn golden. Drain them ont the paper towels and fry the remaining fries the same way.
  8. To fry the fries for the second time, heat the oil to 190 degrees C or 375 degrees F. Add the first batch of fries and fry them on medium heat till they become crunchy.
  9. Remove the fries and let them drain off the excess oil on the kitchen towels. Season with the masala spice mix immediately; use as little or as much as you like.Toss the fries to coat them evenly with the spices. Prepare the remaining fries the same way.
  10. McDonald’s style masala fries are ready. Serve hot with ketchup. Enjoy.
Notes
Always use the newly harvested potatoes that have a low starch content and scaly peel. The old potatoes turn dark and soggy upon frying.

Step 8

Mix them well and set the piripiri spice mix aside for later use.

When you are ready to fry the fries, heat canola or sunflower oil in a deep-fryer or a skillet to 190 degrees C or 375 degrees F. Use a thermometer to determine the temperature. Carefully drop the frozen fries into the hot oil. Do not overcrowd the skillet. The temperature of the oil would drop slightly. Continue frying the fries on high heat.
