Upit is the Maharashtrian style upma recipe made with roasted wheat flour. Upit is a very healthy, quick and easy to prepare breakfast recipe.
  • Ghee/clarified butter - 2 tbsp + 1 tbsp
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1 tsp
  • Asafetida/hing - ¼ tsp
  • Curry leaves - 2 sprigs
  • Garlic - 1 tbsp, chopped
  • Green chilies - 3 to 4, finely chopped
  • Onions - 2 medium, finely chopped
  • Salt - to taste
  • Water - 1 & ¼ cups
  • Curd - ½ cup, slightly sour
  • Wheat flour - 1 cup
  • Coriander leaves - a handful, finely chopped
  1. Combine curd and water in a bowl. Whisk well to make buttermilk.
  2. Melt 2 tbsp ghee in a kadhai or pan. Add in the mustard seeds and let them splutter. Next, add the cumin seeds and let them crackle. Sprinkle the asafetida/hing.
  3. Now, add garlic and saute it until it turns golden.
  4. Toss in the onions and saute until they turn pink.
  5. Add curry leaves and green chilies. Saute for a few seconds.
  6. Add the turmeric. Mix. Saute for a few seconds until the raw smell of turmeric is gone.
  7. Finally, add the wheat flour and salt to taste. Mix well.
  8. Roast the flour with the masala stirring constantly on medium-low heat for 4-5 minutes. The flour will turn golden and give out a nice aroma.
  9. Now add the buttermilk little by little and stir. Make sure there are no lumps.
  10. The mixture should look like a thick paste. Cover and cook for 3-4 minutes on a low flame.
  11. The mixture will come together when cooked through. Drizzle 1 tbsp ghee. Also add chopped coriander leaves. Give it a final mix.
  12. Maharashtrian style uppit recipe is ready. Serve hot with sweet lemon pickle. Enjoy!
