Veg noodles recipe is a popular indo chinese recipe. Boiled noodles are stir-fried with fresh vegetables and beansprouts, bursting with the flavors of chinese sauces.
For Preparing the Noodles
  • Noodles – 150 grams
  • Water – 6 cups, to boil
  • Cold Water – 6 cups
  • Salt – 2 tsp
For the Noodle Sauce
  • Dark soy sauce – 1 tbsp
  • Red chili sauce – 1 tbsp
  • Rice vinegar – 1 tbsp (or ½ tbsp regular white vinegar)
  • Black Bean & Garlic Sauce – ¾ tsp
  • Vegetable Stock – ¼ cup
  • Sugar – 1 tsp
  • Cornstarch – ½ tsp
Other Ingredients
  • Onion – 1 medium, sliced
  • Garlic – 2 tbsp, minced
  • Ginger – ½ tbsp, minced
  • Capsicum – 1 medium, sliced
  • Red bell pepper – 1 medium, julienned
  • Yellow bell pepper – 1 medium, julienned
  • Carrot – 1 medium, julienned
  • Mushrooms – 8, finely sliced
  • Bean sprouts – a handful
  • Spring onion whites – 5, roughly sliced
  • Spring onion greens – 5, finely sliced
  • Sesame seeds – for garnish
  • Oil – 4 tbsp
  • Salt – to taste
  • Black pepper – ¾ tsp
  1. First of all, we need to cook the noodles. Bring water to a boil and add noodles to it. Boil them till they are slightly undone, about 90 percent cooked.
  2. Strain the noodles and refresh them under running cold water.
  3. Fill up a bowl of cold water and immerse the noodles in it till you are ready to use them.
  4. Prepare the noodle sauce by combining vegetable stock, dark soy sauce, black bean and garlic sauce, rice vinegar, red chili sauce, sugar, and cornstarch. Keep aside.
  5. Heat oil in a wok or a skillet till the smoking point. Toss in the the onion and stir-fry for a few seconds. Add the ginger and garlic and stir-fry for another few seconds.
  6. Next, add the carrots, spring onion whites, and mushrooms. Stir-fry for a minute till the mushrooms get some color.
  7. Add the capsicum. Stir fry the vegetables for a few seconds.
  8. Pour in the noodle sauce and stir. Check the salt and add some if need be.
  9. Drain the noodles well and toss them in along with black pepper. Toss well as you stir-fry the noodles.
  10. Add the bean sprouts, spring onion greens, yellow and red bell peppers. Toss again.
  11. Veg noodles recipe is ready. Serve hot as is or with your favorite side.Garnish with sesame seeds and some spring onion greens. Enjoy!
