Pineapple sheera recipe or pineapple kesari recipe is an Indian dessert made from semolina. It has prominent flavour and tanginess of fresh pineapple that makes it so unique. Pineapple kesari is the perfect ending to any meal.
Ingredients
To roast the Semolina
  • Ghee - ½ cup
  • Fine semolina / bareek suji - 1 cup
Other Ingredients
  • Ghee - 1 tbsp + 2 tbsp
  • Fresh pineapple - 1 cup, chopped
  • Sugar - 1 & ¼ cup or to taste
  • Water - 3 cups
  • Green cardamom powder - ¼ tsp
  • Kesar/saffron - 20 to 25 strands
  • Turmeric - a pinch
  • Cashews - ¼ cup, halved
  • Raisins - 2 tbsp
Instructions
  1. To make pineapple halwa, start off by frying the nuts and roasting the semolina or rawa. Take a pan or a kadhai. Heat ½ cup of ghee in the kadhai. Add in the cashews and fry them until golden. Take them out in a bowl. Set aside.
  2. Next, add the raisins and fry them for a few seconds until fluffy. Take them out in a a bowl too. Set aside.
  3. In the remaining ghee, add in the semolina/rava. Mix.
  4. Roast the rava on low to medium heat stirring it continuously until it turns pinkish and fragrant. This will take 10-12 minutes.
  5. In the meantime, let's cook the pineapple. Heat 1 tbsp ghee in a pot or pan. Add in the pineapple.
  6. Saute on low to medium heat for 2-3 minutes of until the pineapple softens. Stir often or the pineapple would stick to the bottom of the pot and burn.
  7. Add in the water, turmeric, and saffron/kesar. Stir.
  8. Bring it to a boil. Let it simmer for 5 minutes.
  9. Turn the heat to low. Add little by little of the roasted rava to the pineapple water. Be careful because the mixture is very hot and bubbles up.
  10. Mix well so that there are no lumps.
  11. When the rava has absorbed all the water, add in the sugar.
  12. Mix well. Let the sugar melt. The pineapple kesari will look glossy now.
  13. Cover and cook the kesari on low heat for 2 minutes.
  14. Then add the green cardamom powder, fried cashews and raisins. Add the 2 tbsp ghee in the end. It will help the pineapple kesari to come together.
  15. Mix the pineapple kesari well.
  16. Pineapple kesari or pineapple sheera is ready. Serve hot or warm. Enjoy!
