Cabbage muthia is a Gujarati snack made from gram flour, cabbage and spices. It is a dumpling that is first steamed and then shallow fried with the tempering ingredients. Cabbage muthia recipe is very flavorful and somewhat spicy. It pairs really well with both green chutney and sweet tamarind chutney. I like it better with tamarind chutney (recipe here) because the sweet and sour taste complements the muthia’s heat. It’s a very filling snack and can be stored for a day or two.

Binding the Dough for the Muthia Recipe

Gram flour is a bit tricky to work with, especially when you add something like cabbage to it which releases a lot of water. So I have used some whole wheat flour in this steamed muthia recipe. The mixture binds quite easily because of the wheat flour. It’s a quite balanced snack recipe. It is delicious as well as tasty. I love to make cabbage muthias for guests who visit us during tea time. It’s a great tea time snack and it’s a crowd pleaser.I find its crunchy exterior from the shallow frying very interesting. It reduces the denseness from the gram flour, making the muthia porous and light.

Ingredients
For the Muthia:
  • Cabbage – 1 and ½ cups, grated and squeezed
  • Wheat Flour – ½ cup
  • Chickpea flour/Besan – 1 cup
  • Fine semolina – ¼ cup
  • Red chili powder – 1 and ½ tsp or to taste
  • Turmeric powder – ⅓ tsp
  • Coriander powder – 2 tsp
  • Dried mango powder/Amchur – 1 tsp
  • Carom seeds/Ajwain – ½ tsp
  • Salt – to taste
  • Sugar - tsp
  • Oil – 2 tbsp
  • Yogurt – ¼ cup
  • Ginger – ½ inch piece
  • Green chilies – 6 or to taste
For the Tempering:
  • Oil – 4 tbsp
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Sesame seeds – 1 tsp
  • Fennel seeds – ½ tsp
  • Asafoetida – ¼ tsp
  • Curry leaves – 10
  • Dried red chilies – 2
  • Green chilies – 2, chopped (optional)
  • Sugar – 1 tsp
Instructions
  1. Mix semolina with yogurt and let it rest for 10 minutes.
  2. Keep the steamer ready. In a large mixing bowl, take the semolina-yogurt mixture, and add the remaining ingredients for making the muthia.
  3. Mix well. The dough would be gooey and sticky. Apply oil onto your palms and immediately shape the dough into rolls and place them on the greased steamer plate.
  4. Steam for 20 minutes.
  5. When the muthia feels firm to touch, it is ready. Take them out of the steamer and allow them to cool.
  6. Cut them into bite-size slices.
  7. To prepare the tempering, take oil in a pan or skillet. Add mustard seeds and allow them to splutter. Add cumin seeds and let them sizzle. Add asafetida and let it sizzle for two seconds.
  8. Add the green chilies, red chilies, curry leaves, sesame seeds, fennel seeds and sauté for a few seconds till they become aromatic.
  9. Add the sliced muthia and sugar. Toss well.
  10. Let the muthia get roasted till gets some golden color.
  11. Cabbage muthia recipe is ready. Serve with spicy green chutney or sweet tamarind chutney. Enjoy!

To prepare the tempering, take 4 tbsp oil in a pan or skillet. Add 1 tsp mustard seeds, and allow them to splutter. Add 1 tsp cumin seeds and let them sizzle. Add 1/4 tsp asafetida and let it sizzle for two seconds.

Step 9

Add 2 chopped green chilies, 2 dried red chilies, 10 curry leaves, 1 tsp sesame seeds, 1/2 tsp fennel seeds and sauté for a few seconds till they become aromatic.

    nic recipe, what do you mean by squeezed cabbage?

      You have to press the cabbage to drain the water. That’s what squeeze means. You can tie the grated cabbage in a muslin cloth and press it with your hands to drain the excess water.

      Hi Deepa. Thanks. Yes, you can replace cabbage with either chopped methi, grated carrots, or grated lauki/bottle gourd. Just squeeze the excess water before adding it to the besan.
